About

                                         OUR MISSION:                 

To grow from the ground to the plate, meats that we believe to be closest to the way God originally intended them to be.  What does that mean to our customers?  You receive meat from animals that are NEVER confined, NEVER given antibiotics or hormones and ALWAYS grazing in pastures and woods that WE have control over.  When we have control, these grazing areas are free from chemicals of any variety and boosted with only organic material provided by the creatures that reside there.  This cyclical fashion of production creates a "win, win" situation for the land, the animals, us (the farmers) and you, the consumer.

Our animals are also supplemented with grains that are always: Pesticide and herbicide free and NEVER genetically modified (GMO).  Why do we supplement?  Despite the push to buy meats from only grass-fed animals, we believe we are supplying the best of both worlds as the marbling (and hence the flavor) of our meats make them superior to that of a grass-fed only animal.  As we observe our animals in nature, we see that they will readily go to a grain field to "chow down" if given the opportunity so we know that there is nothing unnatural about livestock consuming beyond what the grass pasture yields.  What IS unnatural is when those grains are polluted with pesticides and herbicides or genetically modified in any form.  This combination of pure grains and the freedom to roam and to graze naturally results in a flavor punch that transcends the norm and becomes the unforgettable, palate-pleasing cuts of meat that our customers greatly desire and depend on us to continue providing.

Our belief in free ranging, pastured animals is further accentuated by our prior exposure to animals raised in large-scale meat production operations.  While we understand the need for mass production, our personal beliefs push us towards providing a healthier animal and therefore a healthier end product.  Mass production requires the reality of confined animals not exposed to sunlight and natural surroundings that they would instinctively seek out if left free to do so.  This puts a question mark on the general well-being of the animal as we see a resultant overall health decline as well as higher morbidity rates.  Those animals that do make it to the processing facility MUST have interventions like medications and pumped up feed supplies to quickly finish them for marketing to meet the ever increasing demand for protein sources.  When the confinement animal reaches the processing table, it is evident in the quality of meat that we see.  Consider the difference between the guy that sits all day, every day, drinking beer, eating junk food and staring at the t.v.and the guy that gets out in the great outdoors swinging the ax or working out at the gym?  This mental picture should conjure up some thoughts on why animals are better off coming to your plate when they have been raised non-confined!

We have been blessed to be a part of a small, rural community that provides the opportunity for so many personal touches-whether for a small, romantic candle-lit dinner, a once-in-a-lifetime wedding day, or maybe a little cooking tip, our customers trust our experience and abilities to provide the full relationship effect that is usually not found in larger establishments.  In addition, we are able to provide cuts of meat that are fast losing both popularity and accessibility.  Some examples would be:  Bone-in roasts, beef tongue, sweetbreads and head cheese.  The list is obviously longer but it makes our point.  We do take a certain amount of pride in what the years have afforded us in terms of knowledge, insight, experience and the ability to get to know our customers personally in order to best give them the cuts of meat they are looking for.  Each cut becomes like a work of art for us and our customers frequently tell us how much they appreciate the extra measures we take to make their product eye appealing in every way.  This has also extended our customer base as we now have clients who travel many miles from other states in order to get the "Cut Above" products they have come to rely on to tote back home.  With almost 40 years of combined experience in both meat processing and animal husbandry, we bring a lot to the table (no pun intended) in ideas, expertise, flexibility and enthusiasm for both our farming operation as well as meat processing.  We are now looking for new ways to expand this small-town feel to a much larger community.

                                           WHAT'S NEXT?

Since we acquired the processing plant in 2008, we have been a Missouri State inspected facility.  This has allowed us to not only custom process for other producers but also to send product to farmers markets, restaurants and other retail establishments within the state.  We may also ship out of state but only if our product is going to the "end consumer".  This means that we may send our product to John Smith in California but he is not free to re-sell that product nor may it be used in any retail establishment.  This is because each state only recognizes its own inspection agencies or USDA (Federal) inspection.  In response to a higher consumer demand and our desire to offer an elite product in more diverse settings, we plan to expand and update both the farm and the processing plant. The plant- to eventually become a USDA facility in order to capitalize in markets that we currently are unable to touch, and the farm will now be 12 Stones Family Farm.  It is our goal to be the primary provider of all meats that are sold in the retail cases at 4 Quarter Processing.  Our deep desire is to NEVER buy meat from a box again!  This also includes launching our internet marketing nationwide for those people who want to enjoy top of the line, pure, delicious cuts of meat that abide by the standards we have set forth.

                                        THE LABOR OF LOVE

The changes we are wanting assistance in implementing include but are not limited to:   

                    Repairing or replacing current farm equipment.

                    Better fencing on the farm.

                    Increasing the number of production animals.

                    Larger processing equipment.

                    Double chamber vacuum machine.

                    New product labeler.

                    Expansion and renovation to create larger and more

                    efficient working space.

This is the mass of the improvements but not the limits.  This will be quite the undertaking but we are ready and committed as well as excited to start this new chapter.

In addition, we want to employ local workers and make them a part of this growing family as well as impress on them the necessity of keeping the time honored traditions and small business mind-set that can't be replaced by an impersonal mega-industry.

                   

                  

 

Risks and challenges

Some of the risks associated with this project would involve our animals... although we raise them in a manner that we believe is the most healthy way possible, sometimes....nature just wins the battle. Just last month in our state, a farmer sadly lost more than 30 head of dairy cattle in a freak lightning strike. Sometimes, they just do the unexpected and drown in a creek or while giving birth.
Next....paperwork, paperwork, paperwork. When you have a processing plant, you have extreme time constraints as carcass meats can not just be left hanging when some other duty calls. With everything that we are attempting to accomplish in a short amount of time, we will be trying to complete a massive amount of paperwork while still trying to make all of the structural changes as well as continue processing for our loyal customers. This will require much forethought and planning to be sure we miss nothing.
Finally, for those not in the know regarding raising meat animals to completion, we just don't want anyone to get frustrated waiting for a reward. We could just give meat from boxed orders (meaning a bulk distributor sending us meat from who knows where) but this would defeat our purpose of promoting our business as well as our ideals for the highest standards of healthy meat production. So we just want everyone to feel like they are involved in this project and have fun watching it sprout wings and fly and ultimately, we want them to love what they receive so much that, not only will they return for more but also, to spread the word!
