Hi my name is Luis Lasprilla and I am a Johnson & Wales University Graduate. I have my Associates in Culinary Arts and my Bachelors in Food Service Management. I've been cooking for more then half my life and it's my passion it's what I love to do. I'm a Chef and I wear my heart on my sleeve with that being said this is coming from my heart not from a business only mentality. I love to cook with my kids my daughter Samantha she's 20 yrs old and she knows some things my son Christian he's 7 he loves to watch and is eager to learn and is happy to help every chance he gets.
I've always wanted to open my own restaurant but this is even better this is something without all the overhead cost. This is something that I can share with my family where we can all work together. With Cuisine des Artiste **Mobile Food Art** open I could expand into larger catering options I could even cook on premises for events. I would be able to pass the business down to my kids and they can have it when I'm gone. I can have all the time to teach my children to cook and maybe in time they can share in the passion that I have for cooking. I would also like to work with the local high schools or even the community college and help students get started in the industry. I know that food got me off the streets and where I am today.
Along with my wife Christina Lasprilla we decided to open this food truck. We call it Cuisine des Artiste **Mobile Food Art** translated meaning "Food Art". The type of food that I want to serve is FLARE. We all have our own unique style. I want to serve causal food with flare, Southwest cuisine with a French twist. Steaks, Seafood, Game dishes on weekends at a moderate price for a causal date.
Traditional sandwiches like a "Cuban" with marinated roast pork that I will make myself also chicken and steak sandwiches, and of course we cant forget the WINGS!!!!!!!
This will be a scratch kitchen I will bake my own breads cut my own meats and bake my own desserts. 100% love
Some on the equipment that I already have they still need to be professionally cleaned but I've been cleaning it as much as i can. Below is my commercial Imperial stove it is a 4 burner stove with a 2 ft flattop it has 2 full size double ovens, also i have a commercial fryer and a reach-in prep fridge.

Risks and challenges
I know that there are challenges along the way I have personal experience with this. I've put in as much money as I could into this business but I haven't been able to finish. I know if you tackle one thing at a time fires will get put out. I didn't want to ask for money but sometimes you have to put your pride aside and ask for help. I have taken everything into consideration from vehicle cost and repairs, permits, licenses and food cost. Luckily I have met some people that are willing to help me out with this project and are willing to give me good deals and discounts on building the food truck.
With this money I will just hand over the truck to get built by professionals that way i know every penny counts and it will be done as soon as possible. I learned this lesson the hard way.
I have been able to build most of my truck myself, however I just need to finish it. Which is one of the challenges that I am facing. I ran out of money I put in as much as I could trying to do it all myself. I bought the truck, did the floors, put up the studs for the walls I have even started putting up the wall. I have the plumbing and electrical done. I have the cooking equipment that I need a 4 burner stove with a 2 ft flat top and full size double oven, commercial fryer, reach-in fridge, stainless steel prep table, freezer and fridge. I built a 6 ft hood vent myself using all the shelves that came with the truck. I have my water tanks which I have already installed. These are things that I never thought I could do.
The only thing I've ever done with my hands is cook but I've been able to build floors put up walls even build a 6 ft hood all by myself. Unfortunately I'm a year behind schedule and losing money everyday with the truck just sitting there. I'm asking for your help every penny counts so if you can please donate and share.
