About this project
brünch started as a roaming popup bringing the ultimate Berlin experience to London's quirkiest venues. We have now found the perfect partner and space to bring our lovely Berlin brünch to the heart of London Fields, six days a week.
My ambitious goal is to open the first Berlin brunch café in London in November 2016, in less than a month's time. With your support, it is my goal to raise at least £10,000 to go towards transforming the current space into a beautiful permanent home for brünch and making our dream project become reality.
About Noemi, Founder of Brünch
By means of introduction, I am Noemi, a proper Berliner now living in Hackney, East London.
After studying hospitality management in The Hague, I worked around the world until I found myself in London in 2009 working as an independent hotel consultant advising some of the biggest hospitality brands. But two years ago, I walked away from my corporate career. I left to create something very dear to me.
The brünch Vision
Our Founding Story
I grew up in a culture where we celebrate long lazy Sunday brunches in cute little cafes, gorgeous sourdough, rye breads and frische Brötchen. In my home town we like to start the morning with a proper breakfast, read the paper and ease into the day. Brunch is a lifestyle.
When I was little, my mum would make me a 'Stulle' for school, a traditional open face sandwich with beautiful sourdough or sunflower seed rye bread topped with different home-made spreads and at weekends we would make a massive brunch with lots of cold cuts and cheeses, musli and eggs, fresh orange juice and bread rolls, which I would pick up from the bakery in the morning.
I really missed that when I arrived in London seven years ago.
In 2013 I travelled to Melbourne for three weeks over Christmas and New Years Eve to explore what I was told is arguably the ultimate ‘brunch metropole’. It was incredible! I ate myself through the whole city. I was inspired!
With a head full of ideas I returned to the UK. I knew it was time. Time for me to leave my corporate career behind and live my ideas through brünch.
Our Journey so far
I launched brünch in February 2015 and have since hosted pop ups and events across town working with fantastic companies such as Streefeast/London Union, Morning Gloryville, Jägermeister, The German Gymnasium in Kings Cross, Secret Productions, EatFirst and Jamie Oliver's Big Feastival as well as smaller businesses and independent venues from rooftop bars, converted warehouses to hidden underground bars.
I did not have big plans for brünch at first. I simply started out doing what I loved most - bringing people together and sharing a proper Berlin brunch experience with one another.
Leaving a secure City job to create a food start-up by myself was really daunting. But I count myself incredibly lucky to have had the amazing support of my friends and my mum who all believed in me from the start, helped at my events and stood by me with advice and love along the way.
Pop Ups, Events, Collaborations, Festivals
brünch has really flourished over the past 20 months and inspired our guests who have returned event after event.
Early this year, I met Jägermeister and together we hosted some beautiful public and VIP JägerBrünches at local venues and festivals with lot's more exciting events planned in the future.
In May, I was then offered the fantastic opportunity to expand into brunch deliveries in collaboration with EatFirst for six months, bringing our Berlin brünch to your doorstep.
2016 was also our first-ever festival year. After five months of hard work, and lots of DIY in my garden, I officially launched my ‘Berlin brünch Bar’ at Wilderness and Jamie Oliver's Big Feastival serving vibrant and wholesome Berliner Stulle with a twist including lots of vegetarian and vegan options. We are looking forward to our next festival season.
The interest I have received in brünch has been immense, and brünch has received rave reviews. We are very lucky to have been featured by many fantastic lifestyle magazines, newspapers and blogs in London and Berlin.
Berlin brünch - Our Plans
brünch will be the first Berlin brunch cafe in London, bringing Berlin lovers, brunch enthusiasts and the community together in our new permanent home six days a week.
You are what you eat!
We have been working closely with local businesses and suppliers since the very start.
A sample menu of our Berlin brünch in London Fields comprises:
- locally sourced Cheeses, smoked Meats and Fish
- fresh seasonal Fruits
- home-made Jams and Almond Butter
- gorgeous artisan Sourdough and Rye Bread from our favourite local Bakeries
- our signature Berlin brünch Buckwheat Waffles
- Berliner Stulle - thick slices of rustic sourdough topped with wholesome vegan and vegetarian toppings
- freshly baked Cakes we enjoyed in our childhood
- home-made Amaranth & Chia Granola with German Vanilla Quark
- topless Eggs with Remoulade and Sourdough soldiers
- Potato Rösti with smoked Trout, poached Clarence Court Egg and Avocado
- Bauernfrühstück Berliner Art 'Farmers Breakfast'
All of the above will be accompanied by the finest coffee from Germany-based roasters, herbal teas from fresh basil tea to rosemary tea and Berlin kult drinks.
We will also be running a midweek delivery service of our lovely brünch menu in and around London Fields.
brünch is about bringing the community together.
Our lovely brünch family is growing and with a permanent space and in partnership with our lovely friends at London Fields Brewery we want to give those we work with a new exciting place to make their mark.
We want our new home to be a test bed for other great ideas. We love working with up-and-coming DJs to showcase talent and offer a platform for new German drink and food labels to shine.
We will feature all of our trusted partners and local suppliers we work with on our new website for The Taproom, which will launch shortly.
We are very proud to be partnering with the London Fields Brewery that share the same ethos, passion and ideas as us.
London Fields Brewery is an established craft brewery based in London Fields, within a stone's throw of Broadway Market. It’s main venue, The Taproom, which will become our permanent home, will be lovingly transformed in the next few weeks, putting the venue back at the heart of the London Fields community.
DesignTo revive The Taproom, we are giving it a new beautiful look and feel while in-keeping with the DNA and original charm of the brewery.

I am here to ask for your support as we start to nurture the growth of brünch.
My ambitious goal is to open the first Berlin brunch café in London in November 2016 in less than a month's time. While we have a number of items we would love to fund, we are starting with a goal of £10,000 to go towards any of the below:
One of the most expensive but also most essential pieces of equipment is a really good Espresso Machine. We received a great offer for a hardly-used second-hand La Marzocco FB80 and Mahlkönig k30 air coffee grinder from our trusted suppliers (£5,682 including VAT, new £9,620). Additionally we will need to buy a barista starter kit (about £250) and a BestMax Water XL purification system (£238), which is essential to get sweet and floral coffees, plus it prevents calcium build in our espresso machine boiler.
Other Equipment & Supplies
We want to invest into two proper heavy duty waffle makers (£250), an ice cream machine (£260), skillet pans for our Berlin Farmer Breakfast (£15 a piece), ceramics (from £2.50 a piece) and biodegradable take-away supplies for our coffee and food delivery service for the first three weeks of operation (£1,500).
Decoration & Local Craftsmanship
We are investing into our community and have brought on local artists and businesses to help re-design the space. We will be working with a local florist to fill The Taproom with beautiful living greenery (£500). Local artists and craftsmanship will leave their mark in The Taproom and make this a beautiful space with character (£1,500).
I am recruiting a team of incredible people that share the passion for what we do. Wage and training costs are a big overhead to any start-up business. We want to offer apprenticeships, training and development opportunities to pass on our industry knowledge. We calculated that we’d need approximately £6,000 per month initially to pay our staff, expected to be paid by cash flow by the third month.

Risks and challenges
Opening up permanent premises for your business can be an expensive undertaking and may bring to light unexpected challenges. We believe with the backing and support of you, along with our committed partners already on board, and our background within the industry, we have the expertise and experience in place to overcome any challenges thrown our way.
Beyond the inherent risks of running a restaurant is the cash flow required to keep the restaurant both healthy and solvent. As a collaborative business, we believe the cash flows generated from our honest and beautiful food, hand-crafted brews, and events will only be bolstered by our immense community support.
Although we need outside funding for our first few months of operating, we strongly believe in our long-term ability to operate as a profitable and self-sustaining business.
Lastly, the biggest challenge that we face is an ambitious timeline to launch in November. But with the right level of support we are confident we can do this and we look forward to seeing you at the launch party!
