Hi. My name is Colin. I'm a native Texan and I've been a committed vegan for ten years now (I was a vegetarian for many years before that). Over the course of the last decade, I've worked in vegan restaurants, worked in retail, made music, and I've continued to run my boutique record label, Elevator Bath (since 1998). For a good many of those years, however, I've had an additional goal: to open my own restaurant here in Austin.
When my wife and I first decided to go vegan, a number of factors informed our decision. Feelings of compassion and empathy for animals and a concern for the environment were the guiding principles, of course. But the tipping point was the realization that a vegan lifestyle is very manageable and that vegan food can be absolutely incredible. It's not an exaggeration to say that a handful of amazing vegan meals changed my life. And that's the kind of experience that I hope to bring to Austinites in 2014.
The idea for Pulse Vegan was born of my long-standing love of cooking and of a strong desire to contribute to the vegan community in my home state's capital. Austin is a fantastic place to live, and in my own small way, I want to direct my skills, experience, and creativity towards making Austin an even greater and more welcoming city than it already is.
The menu I have developed for Pulse Vegan is big on flavor, with an emphasis on hearty, pleasurable food strongly influenced by Southern comfort cuisine. I'll be offering sandwiches, sides, and platters with many unique and extraordinarily tasty options not found elsewhere in the city.
I already have my trailer, outfitted with a full kitchen and a number of great pieces of equipment. But I still lack a few costly items. The kitchen needs a new air conditioner, a new convection oven, a commercial food processor, a steam table, plus some other small equipment. Add a sizable amount of cookware, containers for storage, mixing bowls, utensils, etc. Also the trailer needs a new paint job and signage. Of course, there are an almost infinite number of miscellaneous expenses to be dealt with on top of this list. And while no one of these things is insurmountable, when added together, the price tag can be pretty intimidating for a start-up. I certainly plan to keep my costs as low as possible, but the expenses I've anticipated with this project simply cannot be avoided. So, my financial goal via this Kickstarter campaign, is to cover the absolute minimum of required expenditures that I still have remaining. I hope to meet this goal and to exceed it, if at all possible. Any additional funding I receive will go towards paying back debts incurred thus far.
I know firsthand that food can inspire and enable positive change in our communities and in the world. I also know that the enjoyment of good food is one of life's great pleasures. At Pulse Vegan, I believe we can have it both ways. But I'll need your help to get there. Thank you for your time.
Pulse Vegan's rewards
My friend, Masami Akita, was very cordial and generous in agreeing to participate in this project. His involvement seems to me to represent a perfect marriage of my two most passionate pursuits (and business endeavors): that of the experimental music record label, Elevator Bath, and of the new venture, Pulse Vegan, which was, in fact, named after these new recordings by Merzbow. This incredibly limited 7" record, with its beautifully deluxe package, will undoubtedly prove to be one of the all-time most sought-after Merzbow releases. I'm humbled and honored to be able to present his new works in this format!
Risks and challenges
The Pulse Vegan trailer is about 90% ready to go. My top choice for a location is very nearly secured too (and in the unlikely event that the location arrangements fall through, there are a great many other spaces available in the area where I plan to be). The other necessary requirements are matters of formality that will take a bit of time to get through, but they're certainly not deal-breakers. I think the real risks and challenges will emerge further down the road and I will deal with any potential setbacks just as I have dealt with the creation of this business: one step at a time.
For now, the matter at hand is in getting Pulse Vegan open and ready for business. So much of the work has already been done that I consider this quite a low-risk proposal.
As for the fulfillment and disbursement of rewards associated with this campaign, I have a long history of delivering on promises of this nature. My record label, Elevator Bath, has been running since 1998 and, during that time, a great number of pre-orders for records, CDs, t-shirts, and more have been offered and fulfilled in a timely manner. So please rest assured that any promises of rewards will absolutely be honored.
