The Kickstarter rules actually prohibit offering alcohol as a reward (https://www.kickstarter.com/rules/prohibited). But the sooner we're funded, the sooner we can get to making premium sake for sale in your favorite liquor stores and restaurants!
According to the definition we found (http://en.wikipedia.org/wiki/Veganism), yes, our sake will be vegan. Some beers and wines are refined using a product called isinglass, which comes from fish, or may be filtered with bone char. Our sake, however, consists only of rice, yeast, water, and koji (a specific mold). We use no other additives.
There are lots of definitions out there about being a “green” or “sustainable” business. We’re aiming for a brewery operation that reduces, reuses, and recycles as much as possible. And, we’ll also look to source our materials as locally as we can, using natural, sustainable and renewable products whenever possible. And, we’ll educate our employees around these practices with the hopes that we’ll all share our “green” values onward.
