sōw : verb /sō/ plant (seed) by scattering it on or in the earth

the city of san francisco needs more fresh juice!  so we are launching a pop-up juice bar in san francisco by partnering with our friends at pause, which is an eco-friendly wine bar on market street between franklin and gough.  we share a similar philosophy with our friends at pause, that 'one cannot take from nature without giving back.'  we want to showcase the beauty and simplicity of organic, seasonal and locally sourced produce.  we will set up to serve made-to-order, organic juice on weekend mornings before the space transitions back into a lovely, intimate wine bar.

our goals.

make juice a daily ritual. 

we want to approach fresh juice as a daily ritual whether you're meeting a friend for brunch, on your way to the market or looking for a natural pick-me-up before a bike ride over the golden gate bridge.  

showcase local, organic and seasonal produce.

we will source fresh, organic produce from northern california farmers and offer a seasonally inspired menu that features three signature juice combinations year round - red, orange (orange, carrot, bell pepper, turmeric) and green as well as three seasonally based, creative combinations.

make fresh juice more accessible.

we hope to inspire and create more fresh juice options in cafes and restaurants around the city and beyond, as well as expand our operating hours and locations.

to achieve our goals and launch our pop-up:

we need the proper tools and equipment to execute an efficient made-to-order menu and plan to purchase: 2 commercial grade juicers, 1 wheatgrass mill, 1 manual commercial juicer for citrus, knives, cutting boards, produce storage containers, composting bins as well as glass and compostable cups.  we also aim to cover operating costs for our initial launch such as rent, utilities and produce.  this will give us the opportunity to show our community what sōw is all about and ensure the viability of our first few weeks at pause.
