Newberg needs a bakery, and we will provide excellent bread and pastries for our community. We plan to open in October, 2013.
Using local and wholesome ingredients we will make artisan breads and rolls, scones, cookies, bagels (boiled, of course!), cinnamon rolls, and pizza. Simple breakfast pastries will be available as well as daily soups, sandwiches and "pizza-by-the-plank". Gluten-free and naturally yeasted options will also be available.
Our Experience and Hope
We both have professional baking experience, and are committed to creating a space that expresses our values of beauty, simplicity, and community. Several tables will be available in our dining area, and our kitchen will be "open," allowing you to sit at the counter and enjoy a great pastry or cup of coffee while watching us knead the dough or shape the bagels. Newberg Bakery is all about building friendships and creating beautiful baked goods.

Your partnership through financial contributions will allow us to purchase the heavy equipment we need to make these wonderful products and create a community bakery. Because we're starting from scratch, we have the opportunity to turn our place into a beautiful gathering and work space. A professional designer is going to work with us to deepen the character of the space. Equipment-wise, your contributions will allow us to purchase a 4-tier deck oven, a 60 quart mixer, a convection oven, and a commercial refrigerator and freezer. The oven alone, with stone decks and steam injection to provide that crispy crust on artisan breads, will run $13,000. The large mixer is $3,000! You'll have to come in and see the size of these things you're helping us buy!! Your contributions will help us create a special place to bake great goods for the Newberg community, restaurants, and Community Supported Agriculture projects (CSAs).

Risks and challenges
Bruce has spent three years baking in the bakery at Bob's Red Mill outside Portland, and Brenda has years of experience providing catered pastries and meals for the many different communities she is involved in. We recognize that starting a business has a lot of "non-baking" tasks associated with it, and our experience in event planning, communications development, and executive support will help us rise to that challenge.
Our biggest challenges are going to be getting the word out that we exist and reminding ourselves to keep relationships prioritized over striving to do more. Two CSAs and three restaurants have already contacted us about providing bread for them. It would be easy to get too busy.
