While a luncheonette is not a new concept, MÅURICE will redefine the experience by bridging the gap between Pastry Shop, Bakery and Diner.
Our primary purpose at MÅURICE is to feed people delicious food and stylish pastries in a humble, charming yet efficient café setting.... Quality, flavor and atmosphere are paramount.
At MÅURICE, our excitement for fresh ingredients, local farmers, time-tested technique and diverse cultures will be contagious.
Our goal at MÅURICE is for every person who walks into the room to feel a part of our enthusiasm. Every customer should walk away feeling inspired, comforted, fulfilled by our light, flavor-focused desserts and the culture. And they will have a new understanding of the varied repertoire of a pastry chef.

We will prepare packaged and cut to order goods throughout the morning and day, celebrating ingredients sourced from local distributors and regional farmers.
WHAT IT WILL TAKE:
START-UP COSTS...Total start up costs for the luncheonette are $120,000.00. Start-up costs include all needed equipment for the café, new structures like the bar/banquettes, chairs, stools, small wares, renovations to the building, necessary permits, licenses and opening inventory.

I have raised $50,000.00 from angel investors, with an added bonus of some needed equipment (a fabulous Carpigiani LB 100 gelato machine, two tall reach in refrigerated units, one low boy freezer, kitchen-aid mixers, sinks, work tables), beautiful Italian Marble for the countertop of the bar to be cut & treated, various pastry small wares...It is amazing how much we have in waiting, ready to be put to work! We are 70% to where we need to be.

Risks and challenges
When it comes to risks and challenges of this project, MÅURICE...the biggest challenge I see is simply not doing it. This luncheonette has been in the works for a good decade but it wasn't until I moved to Portland that I knew this would be the perfect launching point and home to open my first business.
I have been able to connect with and contribute to the culinary community at large in Oregon and Washington. I've befriended regional farmers, tackled various fundraising projects for MÅURCE, with very little resource of my own. It's with sheer will and passion that continues to drive me... and of course, the amazing support of my ever-growing community, which spans east and west.
BIG PLAN & FUTURE PROJECTION:
MÅURICE will be fully funded in 30 days and we will become a fixture in the stylish West End. This will be our flagship shop.
In the next 5-10 years, my dream is to have a Portland, OR to Portland, ME connection...so, this really is just the beginning of a long, prosperous relationship!
