About this project
I've been brewing kefir pop for years and finally felt it was time to share! Naturally carbonated, fermented and low calorie, Pollock's Kefir Pop is a tasty probiotic beverage that is handcrafted and kegged with love. After many years of brewing and perfecting my ginger-pineapple signature flavor, I have finally mastered the kegging of this delicious fizzy beverage, and want to bring the world's first kefir pop on draft to a tap near you!
What would I do with the dough?
I'd like to bring a kefir station or "kefirator" to your local cafe, market, or co-op. For $1200 I can build the first three kefir draft stations, for local delivery. Additional funds will allow me to bring brew hubs and draft kefir pop to more cities!
I currently brew Pollock's Kefir Pop in a small batch, commercial processing kitchen and have a prototype kefir station at our local burrito joint Betty's in Kutztown, PA. I want to grow our business to make kefir pop for the masses! My big dream would be to convert the old Kutztown Silk Mill into a fermentorium and kefir pop cafe.
What is Kefir Pop?
Pollock's Kefir Pop is made using water kefir grains. It's a healthy, refreshing, low calorie drink with only about 40 calories! It contains a range of B vitamins (including B12), vitamin K, and folic acid. It is lightly fermented, probiotic, and contains valuable enzymes. I use all organic ingredients. Pollock's Kefir Pop is a healthy and delicious alternative to traditional soda!
The kefir drink is naturally sparkling as a result of fermentation in the keg or bottle, it is not force carbonated.
Kefir means “feel good” in Turkish. (How great is that?)
What about more flavors?
I'm starting out with ginger-pineapple but hope to add many new flavors. Grapefruit, pear, cranberry, and coconut varieties are in the works.

Risks and challenges
Kefir grains are temperamental. In rare instances, grains can go bad, which could delay delivery. In my years of brewing this has never happened, and I'm confident that I can brew enough kefir-pop for the rewards, as well as build and set up the first kefir stations.Learn about accountability on Kickstarter
