About this project
Hi Everyone! My name is Darcy and I'm the owner, operator & creator of the small market-based health food stall that is The Bircher Bar! I began developing my idea and piecing it together in September last year and have since been unwaveringly determined to create great, simple & natural food in a space that promotes wholesome and universally important concepts such as health and well-being, sustainability, recycling & environmental awareness, charity and consideration of others and cultural & community support. I've been operating my business in local farmers and community markets as well as local events with a great response so far and have recently found an opportunity to occupy a small shop space and expand my idea further. I'm basically looking for a little help to give my humble market stall a home and keep on keepin on with the ideas that make The Bircher Bar what it is!
The shop space is now under lease with me and my best mate, with The Bircher Bar to occupy one-half and his high-end audio business to occupy the other. We plan to integrate the space in the middle - creating a unique coffee and elite audio lounge for people to come and enjoy a great morning get together in a homely and atmospheric environment - definitely the first of it's kind in northern NSW, if not Australia?
The money raised from the Kickstarter campaign will be enough to fit out the shop out ready to trade and developing the packaged muesli blends side of my business, of which donations of $50 or more will receive if the campaign is successful! If all goes well I hope to be up and running within a couple of months!

Risks and challenges
I see the major challenge being, as with all food establishments, is a level of competition from other vendors in the area. As I plan to operate as a 'breakfast and espresso bar' I hope to position myself differently to any major cafes, and attract a more niche crowd identifying with my health-food based recipes& environmental principles. Coupled with the coffee/audio lounge, I believe the business is truly positioned to overcome this issue and succeed.Learn about accountability on Kickstarter
