We’ve made that knife. By combining the very best of eastern and western knifemaking, we’ve created an incredibly sharp, beautiful, premium blade - and we’re bringing it to you for a non-premium price.
The right blade
Your chef knife is central to creating nearly every dish. Whether you’re mincing chives, or cutting apart a whole chicken, the chef knife can do it all.
However, your choices at the store are confusing. Cheap knives are clunky to use and dull quickly. Even if you're willing to spend more, unfamiliar features and a wide spectrum of prices can make the options overwhelming. Finding the right blade can be a frustrating experience, but we don’t think that needs to be the case.
An incredible knife for a fair price
The world of chef knives is out of date. The big knife brands are operating on outdated sales margins that inflate the price of knives sold at a retail store. By avoiding the traditional retail sales model and bringing our product to you directly online, we have created a great knife for a fraction of the price.
Don’t waste your money on a knife block filled with knives you’ll never use. Get the one knife you’ll reach for again and again.
One great blade
A good knife stays sharp and is comfortable to use. A great knife is the one you reach for.
We’ve put a ton of attention into how people hold and use their knives, and we think we’ve designed the ultimate hybrid. A knife that takes the best elements of western and eastern knifemaking, and combines them into one blade.
After experimenting with dozens of blade profiles, grip shapes and types of steel, we’ve created an incredibly sharp blade that feels right at home in your hand. A long deep belly helps with effortless chopping, while the lowered tip makes slicing and finer work more approachable.
Grip & Bolster
The grip and bolster are designed with intention. The contour of the grip makes it feel secure regardless of your preferred grip style or the the size of your hands. Olive Wood - a durable hardwood - keeps the handle grippy whether it's wet or dry.
Even when holding the blade in a pinch grip, a thumb groove in the bolster makes for a more confident and comfortable grip on the blade.
The vast majority of stainless steel blades are made with soft steel that won’t hold an edge. Our blade has a cutting core made of Japanese VG-10 steel. This innovative high-carbon stainless steel holds an incredible edge and won’t corrode like other high carbon steels.
This cutting core is then sandwiched in 66 layers of alternating stainless steels. This technique - sometimes referred to as “San Mai” which is used in traditional Japanese sword making - allows the VG10 to be used for the edge while the other layers form a jacket around it. This layering protects the cutting core, while providing a beautiful layered finish on the faces of the blade.
How sharp? Very sharp.
Many knives on the market are sharp, but few stay that way for long. Being as sharp as possible isn’t necessarily best, particularly if you’re trading off the knife’s ability to retain that sharp edge. A scalpel may be sharper than a kitchen knife, but it would dull quickly.
If your steel is too hard it becomes brittle, and if your edge angle is too fine it will dull quickly. We experimented until we found the right steel and edge profile that maximizes edge retention. The result is a blade that’s razor sharp and stays that way.
Our steel is hardened to between 57-59 rockwell hardness, which allows for a more finely sharpened edge. The blade is then tapered to a 17 degree edge angle, allowing you to glide through even the toughest of root vegetables.
We’ve tested our blade with both chefs and home cooks to develop something that feels intuitive for everyone. After more than a year of designing, prototyping, testing, and manufacturing samples we’re ready to go to production. Dozens of revisions have helped us to develop a knife we can’t wait to share with the world.
Why we need your help
Our knife is ready for production - now we need to raise $25,000 to fund the first production run. All the funds raised will go directly towards sourcing the materials and expert labor needed to create these handmade blades. We have the suppliers and manufacturers lined up and ready to go, we just need your help to bring the blade to life.
