Ever since the two of us (Moni Burgin and Rachel Horesovsky) spent a year working together at a high end chocolate shop in Washington, D.C., it has been our dream to continue working with sweets and to share our joy of desserts with our local community, wherever that may be.
We have both spent plenty of time working on food trucks and between us have experience running just about every aspect of the business. We hope to give back to the community by adopting sustainable business practices where possible and supporting community events (Moni helps out with Honk!TX and very involved in the music community).
Our experiences making gourmet sweets at the shop inspired us to be more creative in the kitchen at home. Though our chocolate shop days are behind us, we still enjoy experimenting with sweets and our passion for desserts has never faded.
Why shakes and fries? Austin has plenty of shops devoted to ice cream, but nowhere that celebrates the tasty combination of shakes and fries. We think the Texas climate will work in our favor. Austin is warm and sunny for most of the year, making shakes a popular treat year round. Doing shakes instead of ice cream also means we can mix our flavors on the spot, allowing us to create a varied menu with just a few ingredients. Plus, who doesn't love dipping fries in their shake?
We hope to feature local, seasonal ingredients from Austin farmers, and make as many ingredients from scratch as possible. We will be using coconut milk instead of cow’s milk as our base, lessening our impact on the environment both to produce and store it, as coconut milk doesn’t need to be refrigerated.
What’s in it for you? You'll get to enjoy tasty, creative milkshakes, and you get to help your local economy by supporting small businesses. Also, we'll be giving out some sweet rewards to our Kickstarter backers!
We hope to give back to the community as much as it has already given to us. We will be working our butts off to make this milkshake dream come true as we spend the next month crafting a menu, perfecting recipes, and the biggest part: buying and building out a truck. This is the part we cannot do without YOU.
How can you help? You can donate. By contributing to our Kickstarter, you are helping us build our kitchen, pay our first month’s rent, paint the truck, purchase ingredients, pay our taxes.. we cannot do this without you.
Pledge your support today to invest in a future filled with tasty, creative shakes and fries!
Risks and challenges
We are still in need of a truck! Though the overhead for a trailer is still lower than that of a brick and mortar, it ain't cheap. Refrigerators run from a couple hundred to a couple thousand dollars, and ice cream needs to stay cold.
We will also need to develop a strategy for producing our standard and seasonal flavors, sustainably. Because we plan to utilize local products and make as much of our ingredients from scratch, we will need to design a workspace and schedule which will allow us to craft each element of our product with care, from crushed cookies, to fruit compotes, to whipped cream.
Another (happy) challenge for us is meeting the creativity level of our competitors, while creating a unique product. There are many amazing ice cream shops in Austin which showcase local and seasonal flavors. Our mission is to join this incredibly talented community of foodies and bring our own twist on desserts to the table!
-Our projected cost and overhead is pretty low for a business.
-There is almost no competition for milkshakes in Austin, despite the hot weather creating a milkshake-thirsty customer base!
-Moni has two years experience running a food trailer, the Jalopy
-Rachel has experience working on a food truck, marketing through social media, and implementing sustainable practices in restaurants.
