I'm opening a full service cheese shop this October. I will be featuring local Ohio cheeses, artisanal American as well as specialty import cheeses.
The shop will also support other local crafted products. A great assortment of crackers, nuts and dried fruits, local honey, jams and spreads, olives and antipasti, pickles, condiments and sauces, chocolates and sweets, oil and vinegars.
There will be seating available for cheese tastings.
The funding from my Kickstarter is for the opening of the production kitchen, cheese aging rooms/caves, and packing and shipping room. The first 2 cheeses I'm crafting will be a 60 day aged Gouda and a Bandage Wrapped English Cheddar, aged 12 months.
I have also approached other local Ohio cheesemakers about aging their cheeses in my caves. This a program that I'm trying to develope here in Cleveland. Living in London for years, I'm familiar with this practice. By 'curating' the cheeses, it's a better end quality product. Cheeses are aged here in the caves. Once the cheese has reached its desired flavor characteristics, we are able to sell it to you at its peak.
Risks and challenges
The building of the cheese shop has already begun. Plans to open in October are on target. New deli cases, shelving, painting the walls, work counters, storefront window display are all in progress. Tables, chairs, and benches are in the works, so we can offer cheese tastings.
