Every Bald Baker product will be made without sugar, grains, dairy or eggs. Instead, we sweeten with erythritol and stevia, which have little to no impact on blood-glucose levels (and are keto-friendly!). We use almond, coconut, chickpea and buckwheat flours instead of nutrient-void white flour and add delicious flavour and texture (as well as fiber and healthy fat) by using walnuts, pecans, peanuts, and flax – to name a few of our staple ingredients. Each and every bite of a Bald Baker product has such depth of flavour and richness that you’ll forget that you’re eating a healthier dessert!
I had a terrifying experience one night a few years ago with my father. He is a type II diabetic and he made me realize how challenging it can be for a sugar conscious individual to satisfy his or her sweet tooth without feeling traumatic consequences. At Bald Baker, we believe that everyone should be able to feel guilt-free culinary satisfaction and joy, but it is unfortunately a struggle for far too many. The Canadian Diabetes Association estimates that today, one in three Canadians lives with diagnosed diabetes or ‘pre-diabetes,’ and as many as 60% of Canadian adults are overweight or obese. These are staggering numbers! The Centers for Disease Control and Prevention supports this statistic with similar figures in the United States, and they are mirrored around the world. The incidence of diabetes and obesity is growing at an alarming rate due in part to the prevalence of low-cost, high-calorie, sugar-laden foods.
After indulging in a typical cookie, your blood-glucose levels experience rollercoaster-like fluctuations:
A 3pm coffee is the least of people worries during the ”crash” cycle. Prolonged periods of these spikes and crashes can lead to insulin resistance and ultimately, type II Diabetes, heart disease, obesity, and even cancer.
Unfortunately, we are inundated with unhealthy food choices and it is far more difficult to find truly healthy alternatives that are actually satisfying and don’t taste like you are compromising. I started Bald Baker in January 2017 armed with a dream: to give delicious dessert experiences back to those who have for too long either resentfully abstained, settled for lower-quality, second-best treats, or worse, indulged in a way that is detrimental to their health.
Diabetics are not the only people actively managing their sugar intake. Even though the statistics reflect a very large and growing diabetic demographic, the latest research supporting the evils of sugar has really opened up the marketplace for our company. Bald Baker’s products are being enjoyed daily by vegans, grain-free and gluten-intolerant individuals, and many other sugar conscious people making healthier diet and lifestyle choices. This includes customers following the ketogenic diet, which favours fat over carbs/sugar; and parents purchasing for their children. (We’ve received the seal of approval from more kids than we can count!)
After testing the Ontario market for the past few months, the feedback and the reception can only be interpreted in the following way:
I’m confident that there is a market for our sugar conscious desserts. We sell out every week at our farmers' market; our café customers repeatedly increase their weekly order; and I'm constantly receiving requests for large, custom orders.
Now is the time for us to scale the company. All of our branding, our delicious products and the thousands of happy customers have led us to fantastic retail opportunities that cannot be ignored. We have developed those relationships and the only missing piece is the retail-readiness of our products. At present, there are eight independent retailers and distributors that could stock and promote our products, including one very notable international grocery chain.
I’m very proud of our progress. We've come a long way in a short amount of time – and we've only just begun. It's time to fund our first large-scale production run and that means so much more than baking 10,000 cookies. Some of the costs are listed below. Consulting fees to a food science agency to optimize shelf life using only natural ingredients and inputs
Marketing and Advertising budget to help spread the word and build the brand's value outside of Toronto
Sampling and Promotion budget to fund in-store demo's and free-fill orders from retailers.
Risks and challenges
We've already started building relationships, obtaining indicators of interest and securing orders for our products. There are multiple distributors with inroads both to national retailers and carb-conscious consumers that have expressed a willingness and desire to stock our treats. Local, influential and trend-setting retailers have followed suit, as has one international fast food chain. The demand is palpable; the challenge is going to be fulfilling it!
We are currently consulting with Niagara College's Canadian Food and Wine Institute to optimize the shelf-life of our products using only natural inputs (for example, rosemary extract as an ingredient, and nitrogen as a flush for the wrapper). The intention is to create shelf-stable products with a life of at least 30 days (if not closer to 90-120), making them eligible to be carried by the national retailers that are currently expressing interest in the product.
Finally, the Canadian Food Inspection Agency, along with the FDA in the United States, regulates the ingredients, the packaging, the copy, the nutritional labeling, the iconography, the images and all other visual content on all packaged goods and is strict in its enforcement of compliance. Bald Baker respects and appreciates this agency's resolve to protect consumers and so we are working with them directly to ensure that each and every element on our package is in compliance.
