On January 13, 2014 we, the The Pixie and The Scout, signed the lease on 1,100 sq ft of beautiful concrete, brick & windows. Soon we hope it will be the home of our very own commercially certified kitchen workspace and tasting room.
THE WHICH AND THE WHAT?
The Pixie and The Scout is chefs Jonathan Hittinger and Katy McNulty taking everything they have learned about procuring and cooking delicious food … hosting it into feasts that are as OF THE MOMENT as possible … for a few or a great many diners.
We believe that food worth celebrating is costly -- a cost most numerated in human labor and love.
We believe that each event is as unique as each client. For that reason, we have no set event menu. We do our utmost to marry the most delicious ingredients of the moment to a client's desired event experience.
We believe that intelligent hospitality is not just icing on the cake … it is the glue that binds an event together. From inception to execution, we hope our service is unmatched.
THE NEXT STEP:
For nearly a year we have been using any and every spare second and square inch of our free time&space to create and cater market-inspired meals all over the Eastern Seaboard.
Big ones, little ones … meals for many of you!
And now after many months of underground cooking and bridge&tunnel food schlepping, we are building our very own commercially certified kitchen and private tasting room!
Unit 102. 925 Bergen St. Brooklyn 11238.
In 2014 we hope to grow The Pixie and The Scout into a truly remarkable brand of hospitality. One with the highest standards of excellence. One with imaginative flexibility. And one that features the heart of our own culinary inspiration -- food sourced from the greatest of our farming, fishing and foraging friends. In order to realize these dreams, we have drawn up plans for $25,000 of structural improvements, equipment and finesse!
Once outfitted, this space will:
- Allow us to produce larger … more magical events for a greater volume of clients.
- Make room for us to grow our delivery program -- market-driven appetizers and meals delivered right to a client's office/studio/apartment door!
- Provide a permanent home to our educational series "The Pixie and The Scout: Adventures in Seasonal Eating."
- Act as host to our monthly Pop-Up Suppers featuring menu-less, market-ful dining in all its zany deliciousness!
With your help we plan on filling this new work space with the following equipment (and a few unillustrated items as well!)
One final goal for this project is to provide culinary studio space for collaborators -- many of them are you! This means that we will design and build out our space with growth and flexibility in mind. If perchance we beat our funding goals … we have a growth plan for additional, more specialized equipment that will allow us and YOU to pursue more niche culinary projects down the road.
Risks and challenges
We know that commercial kitchen certification requires a tight ship and often involves unforeseen fix-up projects. We also know that the statistics surrounding the rate of food business failures are a bit staggering.
We have proven to ourselves and initial investors that our business model is sound and profitable! We have led multiple kitchens in New York City through the certification process and we know what it takes to succeed. Our funding goal includes a cushion for certification hurdles and our plans for the tasting room have been phased out to take advantage of any funding surplus … so raising above and beyond $25,000 would be GREAT!
Our commitment to working with only the finest network of food producers -- farmers and fishermen we know and trust, means that Pixie Scout hospitality is often costly. For this reason, we have spent the last year growing a similar network of clients and food enthusiasts who share our ethical and philosophical food values. They have demonstrated they are willing … even thrilled … to support our brand of cooking and eating!Learn about accountability on Kickstarter
