What we're building:
Stonefruit Espresso + Kitchen will be a warm, bright, and positive addition to Brooklyn's coffee scene. First and foremost, our espresso-based beverage menu will bring a new standard to the neighborhood, featuring direct-trade, sustainable Counter Culture Coffee. We will serve a small, delicious menu of farm-to-table, local, creative, responsible and house-made snacks, desserts, and light meals. We will also offer organic tea, kombucha, and selected juice and smoothies. We are seeking to give our community tools to battle our culture's troubling health trends-- we are leaving out controversial ingredients, focusing on nutrient-dense recipes, and exploring appealing examples of gluten-free, vegan, vegetarian, paleo, and refined-sugar-free eating. Everyone will find something for their diet and ethical needs, in addition to their cravings. We'll be your favorite neighborhood coffeehouse that deliciously supports your goals and wellness, rather than enabling your vices.
Stonefruit will provide an open, light-filled, modern, and positive environment for the neighborhood to spend a few moments for reflection, conversation, or work. A beautiful sidewalk cafe will attract passersby and provide a multitude of extra seating. Stonefruit Espresso + Kitchen will feature an open kitchen, inviting its clients to witness and learn about creating wholesome snacks and meals. We will also host cooking and baking classes, and provide catering services from our in-house bakery. In the evening, Stonefruit will offer a relaxed atmosphere in which to enjoy craft beers and organic wines. The owner of the business will be present practically daily, and will personally be running the cafe, ensuring the highest quality of customer interaction and operation.
Simultaneously, we'll also be looking out for our environmental footprint, and ways to decrease it. We are committed to being an example for cafes and restaurants of how to cut down on waste, and make simple choices to make a big impact. We will highlight local and seasonal produce, cut down on packaging, use responsible packaging when necessary, run incentives for reusable cups, give customers the opportunity to recycle and compost anything they don't consume at Stonefruit, and run a compost program with a local community garden.
Where you can find us:
Location location location! I've found an incredible home for Stonefruit Espresso + Kitchen: in a brand new corner, red-brick building on Bedford Ave and Clifton Pl in the Clinton Hill/Bed-Stuy neighborhood of Brooklyn. We're located one block from the subway, in an incredibly quickly developing neighborhood, close to Pratt Institute. Tons of Stonefruit customers, and there will be so many more within the next 10 years! We've already started construction and are working industriously to get Stonefruit open as soon as possible-- our goal for opening is late April!
This is where you come in:
Over the last 5 years, I've saved up most of what I need to build Stonefruit, but I need a little bit of help for the home stretch. I've got the down payment, electrical, plumbing, and contractor work covered. But I need to raise at least $20,000 to cover equipment costs such as a convection oven, vitamix, dishwasher, mixer, coffee grinders, refrigerators, freezers, induction stovetops, etc.
Help Stonefruit Espresso + Kitchen become a reality in Brooklyn. We'll be building an example how delicious good food can be, and hopefully help a lot of people towards their goals, while creating a peaceful and restorative space to chat, connect, dream, and eat.
Who's behind all this:
Laura Sorensen has created a thriving and successful career as a Regional Account Executive to high-profile, successful luxury beauty brands such as Sephora, Caudalie, Hourglass Cosmetics, and Drybar. She has generated hundreds of thousands of dollars, building business throughout 75 accounts, as high-profile as Barneys and Bergdorf Goodman, in addition to beauty behemoth, Sephora. She will bring her business accumen, relationship-building skills, and salesmanship to a cause she is deeply passionate about: espresso and farm-to-table nourishment in a beautiful setting. She has over 3 years' experience in the coffee and food industry, and has been learning the tricks of the cafe trade most recently in a flourishing health-food cafe in the West Village, Nourish Kitchen + Table.
In addition to her professional accomplishments, Laura has grown up baking, exploring gluten-free, vegan, vegetarian, paleo, and sugar-free diets for the last five years.
She is thrilled to be bringing Stonefruit Espresso + Kitchen to life, and can't wait to meet you. She will personally be managing and running the cafe daily.

Risks and challenges
Everybody knows the dire statistics that face a cafe opening in New York City. Not only am I starting this business without debt, I have done extensive research on the coffee business in general, in New York specifically, and in Bed-Stuy/Clinton Hill even more specifically. This neighborhood is far from its saturation point of good coffee, and there is nothing like Stonefruit available without getting on the train. Meanwhile, the healthy food business is sky-rocketing-- consumers have more knowledge at their fingertips than ever before, and the success of Whole Foods trumpets an era when we are all a little pickier about what we eat.
I am also building an inspiring team, including an incredibly committed and skilled architect who will see the project through construction, a nutrition coach/assistant manager to help run the cafe while keeping it true-to-vision, and an experienced chef devoted to seasonal produce and interesting flavor profiles.Learn about accountability on Kickstarter
