We want to bring a little bit of Seoul to our rock and roll town of Minneapolis/St Paul. Combining the explosive flavors of Korean food with a funky bar program and letting them lounge in an eclectic dining room. We want to fuse what makes dive bars awesome with the great food and feel of Korean pojangmachas (Street Food Tents) to create a whole new experience! Sounds crazy, yeah we know but trust us, we are just the right amount of crazy to whip up something you never knew you always wanted. Located in the wonderful Midtown Global Market, the Rabbit Hole will be 1 part Lake St. neighborhood watering hole, 1 part intimate dining experience, and 1 part culinary travel adventure!
Our passion is simple, we love food, we love drinks, and we love to make people happy with our food and drinks.
Creativity is definitely necessary to stretch our shoestring budget. We are DIY to the max and painter, carpenter, cleaner, demolition, garbage hauler, decorator, and even the mashup of our Kickstarter video are just a few ways we are getting everything done. However, the little extra but most important push to our doors opening comes from you.
We are fortunate to start with a great shell, and your kindness and generosity will forever make you part of The Rabbit Hole and will help enable us to:
- stock our pantry shelves and fridges.
- purchasing specialized kitchen equipment and dinner ware.
- construct a chef counter in front of the exhibition kitchen.
MAKING DREAMS COME TRUE:
The Rabbit Hole has been in the making since Thomas started his career in the kitchen more than 12 years ago. We've dreamt, planned, rethought, and dreamt some more and some more. We have learned that nothing is easy, that we are a constant work in progress, and that helping hands are around every corner. Our passion and love for good food, good drinks, and good service started this crazy dream, but the help from all of you, along with the Neighborhood Development Center, The City of Minneapolis, our friends at Highland Bank and KalCon construction, our wonderful Left Handed Cook kitchen and counter crew, all our amazing guests, friends, and family, are make this dream of ours a reality. We want to thank you and everyone involved for helping to keep the entrepreneurial spirit alive and kicking!!!
Risks and challenges
As a restaurant, we faces challenges such as construction delays, permit and licensing issues, and the fact that there aren't enough hours in the day, but we are ready and willing to meet them head on! Many of the big obstacles have been taken care of such as the kitchen layout, hood systems, plumbing and bar construction. We have purchased many of the Korean style plates, bowls and cups that will help make dining at The Rabbit Hole a fun experience. We are currently working on the interior design such as building unique booths and partitions, installing new lighting and giving the whole space a new coat of paint. We also plan on opening the kitchen up so that our guests can see what's going on which means removing three walls and a soffit as well as installing a chef counter. Your support will help take care of some of these expenses and help us open our doors as soon as possible. Turning our dream into reality comes down to hard work and passion, and we plan on taking the same tenacity we used to create The Left Handed Cook and put it 110% into The Rabbit Hole. With your helping hands, we will be able to better manage the unexpected oven breakdown or added construction costs. Of course the risks of owning a restaurant are high but with Thomas' experience of over a decade in helping open and run many successful restaurants in California, we feel confident that we will bring the same level of success to The Rabbit Hole.Learn about accountability on Kickstarter
