Dry aging steak takes a large cut of beef and over time allows for excess moisture to escape, making the meat tender and juicy. Most of the moisture comes out within the first three weeks and when trimmed and served makes for a much tastier and tender steak. Double that amount of time and it starts to transform into something truly unique.
Aging beef requires a delicate environment in order for the meat to dry out slowly and safely over time. The Beef Box provides the perfect environment to age steaks every time.
Aged steaks are expensive! This is typically due to the extra time it takes to properly age the beef. You can go to a high-end steakhouse for a nice dry aged Prime Ribeye and pay upwards of $60. Very few grocery stores actually sell aged steaks. If you are lucky enough to find one, they can sell for a 60% premium. This is where the Beef Box comes in.

The Beef Box works by replicating a professional dry aging environment inside your home refrigerator.
This is accomplished by creating the necessary conditions that dry aging requires.
- Controlled humidity

The Beef Box's proprietary control system monitors and adjusts to create the perfect steak aging environment.
The humidity is controlled by a fan and slider mechanism. The fan will maintain the optimal dry aging environment while the slider adjusts the exhaust opening. The levels needed lie within a range of 60-80% relative humidity. The beef box is designed to maintain this range throughout the aging process.
The temperature is displayed on the LED display. This allows the user to adjust the refrigerator thermostat in order to achieve the desired temperature range of 35-38°F.
The necessary airflow is controlled with the intake fan. The airflow has been verified to meet the optimal velocity over the beef surface. This aids in the drying process and helps prevent bacterial growth.
Typical aging duration is between 14-30 days. It is recommended to wait at least 21 days in order for the flavor profile to develop and to maximize tenderness. The longer you age, the more the flavor will change. This allows for customization of your favorite dry-aged settings.
- Open the Beef Box container and place the cut on the wire rack.
- Plug in the USB power supply.
- Place the unit in refrigerator and plug in the nearest outlet. The cord will not hinder the closing of the door or affect the performance of the fridge.
- Leave the unit in the fridge for a few hours for the unit to stabilize, then check the temperature and humidity levels. Adjust the thermostat in the fridge as needed to achieve the range of 35-38°F. Adjust the slider position to set the humidity limit. Open the slider to lower the humidity and close it to increase it.
- Now just wait at least three week.
- Slice and serve when ready.

The wire rack was designed to allow for sufficient airflow under the beef which most off-the-shelf wire racks lack. Instructions on how to cut the openings as well as a template will be provided. We recommend this option for our international customers.

The timeline for production of the Beef Box has been meticulously planned out. The preferred vendors have all been selected and some of the production samples have already been received and evaluated. The remaining components need to be tooled up which will be our critical path for delivery.
The goal is to ship before Christmas so you can plan ahead for one great gift.
The Beef Box was inspired from the pursuit of another dry-aging device (Stay tuned...) that we were developing. The thought came to replicating the dry-aging environment rather than re-creating it. The idea of altering the current conditions of the environment instead of altering the environment itself. A dry aging refrigerator will alter the conditions by physically adding temperature and humidity. The Box Beef simply uses these conditions created by a household refrigerator and regulates them.
The first Prototype not only worked as a proof of concept but also a great data acquisition tool. We varied the fan as well as covering the holes and analyzed the data. This let us write a suitable design of experiments for the next aging test. We also 3D printed the fan housing and slider design to verify fit and function. The next beef run lasted 45 days that led to over 150 test trials. After analyzing the data and writing some code, we were able to control the conditions and the Beef Box was officially born. Further tests gave even more insight into the process. We are always learning and working on making the best product as possible.

Risks and challenges
There are many risks and challenges when releasing a new product. Experience has taught us that the work put in before production will minimize the issues encountered after production. However, due to the nature of a start-up, tried and true suppliers have yet to be discovered.
All vendors undergo a vetting process to gain as much trust as possible but uncertainty still exists.
