What is ice3?
ice cubed is a company that specializes in original flavors
of small batch ice cream, hand-crafted ice pops and frozen libations. We
launched our business this summer as Chicago’s first and only modern, adult ice
cream truck. Our inspiration comes, not only from the pastry kitchens and
mixology bars of America, but from the savory cooking lines as well.
The results are often sweet, tart and fruity. Sometimes vegetal, salty, spicy
and herbaceous. Frequently meaty and minerally. 2 of our goals are
to entice you to expand your idea of frozen desserts/frozen cocktails and to
delight your taste buds. The third is to redefine the modern ice cream parlor.

Our flavors are original creations. Take our Black Velvet: Black Onyx ice cream,
bittersweet brownie, cream cheese swirl finished with a sumptuous smoky scotch
caramel. Or be daring and try our signature ice pop-the Prix Fixe-an entire 5
course Italian degustation meal (including beverage & meat courses!) all in one ice pop:

What is an “ice lounge?”
Definitely not an old school ice cream parlor and not a bar with walls of ice. Our space has been designed to be modern and stylish but comfortable so you can sit, relax and chill with your peeps. An ice cream lounge that is kid friendly, not kid-centric so Mom and Dad can really enjoy the tradition of taking the family out for ice cream while enjoying some of the
most creative and delicious ice concoctions to be found. Few Spirits Bourbon Milkshake anyone? Or maybe a Half Acre Chocolate Camaro Stout & Espresso ice cream float? Perhaps a glass of Rosepetal Gwertzraminer Iced Champagne?
We have the perfect location: great visibility and foot traffic, we love the
neighborhood and there’s such an eclectic
mix of cultures-the perfect place for a
young innovative company to lay down roots and nurture our passion to explore the boundaries of our two favorite indulgences: all things ice and locally produced spirits.
How we will use Kickstarter Funds
Opening a restaurant/lounge is a huge undertaking. We have happily invested everything
to bring this concept to fruition. Not only do we believe in it but we’ve seen how ice cubed's fans believe in our
concept and how much they love our ice creams and ice pops. Be a part of of the excitement and creativity
that has put Chicago on the map as one of the most fertile culinary centers of
the country. With your support, we will use your Kickstarter contribution to complete
the funding for building our ice lounge. The money will go to construction costs including
hiring an architect/contractor, the build out and a special novelty freezer to showcase our beautiful ice pops. Oh, and most importantly: we need your help to secure our liquor
license-cause if you know Chicago, getting one isn't going to be easy or cheap.

HOW DOES THIS FUNDRAISER WORK?
This Kickstarter fundraiser is
all or nothing: if we don't reach our goal, we will not receive any of the
donations pledged and your credit card will not be charged. If we do reach our
goal (and we hope we do!) your credit card will be charged when the

Risks and challenges
While every project has risks, in its short history, ice cubed's popularity and growth has surpassed our expectations. We have created a concept that people love and are excited by. While the ice cream lounge concept is totally new, ice cream is not a fad and we expect the superior quality and our delicious, original flavors to continue to be the strong backbone of our successful company. We feel that a brick and mortar ice cream restaurant, with the added attraction of a full bar, will allow what has been seasonal business, to thrive all year round.
However, there are some factors that could pose challenges as we prepare to launch: Delays in the construction schedule and delays in the permit process are some of the biggest concerns. As I (Erika) have been a landlord for 16 years, over time and through multiple projects, I have assembled a talented and efficient construction management team who has proven capable of creatively solving the unexpected hurdles that inevitably crop up with all construction projects.
As for the permits, I am in communication with and I am cooperating with our local officials who have been very supportive of ice cubed and encouraging of small businesses in the area in efforts to help vitalize the burgeoning Lawrence Avenue retail scene.
