Fenwyr Cellars is a Meadery located in Spokane Washington. We make mead, also known as honey wine. We chose to start our Meadery in Spokane because of its growing wine and micro-brew culture and with the lack of Meaderies; we believe that Fenwyr Cellars will make an excellent addition to this culture.
Fenwyr Cellars is a member managed LLC or Limited Liability Company. Principle Members are Daniel Jessee, Jamie Friedman Jessee, Thomas Phillip and Stephanie Grochowicz.
In 2011 Daniel got the idea to create Fenwyr Cellars and worked out the concept for it. In 2012, after deciding with his wife Jamie Friedman-Jessee, he contacted Thomas Phillip and Stephanie Grochowicz and started the work of transforming Fenwyr Cellars from an idea into a reality.
In Nov 2012, Fenwyr Cellars was formally founded by Daniel Jessee with wife Jamie Friedman-Jessee, Thomas Phillip and Stephanie Grochowicz. In Nov 2013, Fenwyr Cellars finally set up operations at 928 N. Lake Road Unit 10B in Spokane Valley Washington 99212.
Our Master Mead Maker has created 11 amazing recipes with a wide variety of flavors that suit the palate of any individual. Batches are currently small but we hope to increase to larger sizes so we can begin distribution to stores, wine bars and specialty shops.
Fenwyr Cellars was begun on a grass roots principle with no bank loans or debt.

What is Mead?
What is Mead? Where did it come from? How old is it and why are we so obsessed with it? If you would like to know these answers, keep on reading.
Mead is an alcoholic beverage made by fermenting honey and water, simple right? Some call it a Wine but when you get down to it, Mead is as closely related to Wine as Wine is to Hard Cider or Beer. Mead, as a beverage has a unique mouth-feel not shared by any other kind of alcohol, it retains some of the character from the honey it is made from, even if it is fermented dry (no remaining sweetness).
The origins of Mead have been traced back to Africa. Some estimates place the discovery of Mead as far back as 70,000 years. Discovered? Wait a second! You mean to tell me that we didn't create Mead on our own? That's right folks, Mead was a natural discovery, a result of bee hives getting flooded by monsoonal rains, it was humankind learning how to replicate Mead that allowed for us to take it with us as humankind spread out and colonized the world. Mead is far older than any other alcoholic beverage consumed today. Wine, for example, dates back 9,000 years and Beer dates back 7,000 years. Over the centuries, Mead has been produced and consumed by every major civilization at some point in their history. It can be said that without the discovery of Mead, we wouldn't have created Beer or Wine either.
Why are we so obsessed with Mead? Because Mead is awesome! It tastes amazing and goes with anything and everything. You can mull it with spices, make a mixed drink with it, drink it warm, hot, cold, on ice, however you want. We can make our Mead to be sparkling; dry, sweet, very sweet, spiced, fermented with apples, grapes, pear, peaches, huckleberries… you get the idea. Mead retains the character of not only the honey but the fruit and or spices it is made with. Mead is amazing stuff, absolutely the best alcoholic beverage that we have ever had and that is why we want to share it with you!
In the last few years, mead has begun something of a renaissance in the United States and has been featured in many news articles NPR, New York Times, Forbes, and Popular Mechanics.
What Makes our Mead Different?
Our mead is amazing! It has well defined texture and flavor. It pushes the boundaries of what is considered sweet, dry, spicy or fruity in an wine. The ingredients we use for our meads are sourced from local and regional producers whenever possible.
Our Master Mead Maker has over 12 years of experience in making Mead. Daniel specializes in traditional meads, as well as meads made with fruits known as melomels and spices known as metheglins.
How your Funds will help us?
Recently we have ran across an impasse, we have found that after we got all set up we did not have the resources to produce all our recipes. Our goal of this kickstarter is to get the resources to complete this. This will allow us to expand our production and get our Mead to market. Any additional supplies will be used to purchase larger equipment such as larger fermenters, pumps, filters as well as additional supplies such as honey, bottles, labels, foils and corks.
