Hitting Our Goal - Stretch Goals!
Thank you, thank you, thank you for all your support and spreading the word! It feels a little surreal that we actually hit our goal and have gone slightly over, especially since we were still so short only a few days ago! A few backers have contacted us to ask us to create a stretch goal, and so we're back to let you know what additional pledges will enable us to do!
Stretch Goal - $10,000 - Unlocks a step-by-step guide to our pulled pork/mango pie and funghi formaggio for $25 pledges and above! This level will allow us to install adjustable jacks for the trailer, which will help create a more ergonomic and efficient workflow for us when making your pies!
Stretch Goal - $12,000 - Unlocks a step-by-step guide to our Peking duck pie and our crispy flat bread recipe for pledges $25 and above! This level will allow us to upgrade our trailer into a double axle, creating a much more stable trailer for our beloved oven!

What's Za Pi All About? Mission #1: Community Driven Delicious Pizza
We want to bring custom-made, affordable, wood-fired Neo-Neapolitan pies to Chicagoland farmers markets. We plan to use only local and fresh ingredients whenever possible to help support local farmers and producers. By using great tasting ingredients and our multi-day cold-fermented dough, we hope to bring joy to the community on what we believe are some of the best pies around! We'll be serving pies at local farmers markets and catering parties and other events by request! We plan to have the big three traditional pies (marinara, bianca, and margherita) available, as well as two rotating specials each week based on your votes! Whenever you purchase a pie, you'll have a chance to vote on next week's specials from a list of customer and owner created ideas... and boy do we have some non-traditional ideas we want you to try!
Is Za Pi doing anything different? Mission #2: Bring Your Own Ingredients (BYOI)!
Inspired by the D-Talipapa market in the Philippines, we want you to able to bring us your vegetables your purchased that day, have us slice/dice/chop them up, and cook it on your pie along with any ingredients you may want to "borrow" from us! Use them on top of a traditional or specialty pizza at no additional cost, or work them into a custom pizza with the ingredients we have on hand! We're working with the local health department and farmers market to determine how we can make this work, as we really believe it's a great way to enjoy your fresh vegetables you've bought and help you save some money!
How will Za Pi use the funds from Kickstarter?
We've saved up money for the oven but we're looking for funding to mobilize it on a trailer! Your donations will help fund our ability to mobilize the oven, as well as get the proper equipment to serve our pies at the farmers markets to meet health department regulations. Things like tables, wood-fired oven supplies, pizza peels, coolers, permits, licenses, etc.will help us succeed in bringing Za Pi to you!
To my wife, for being supportive of my crazed pizza obsessions, sampling creations, and being our photographer for our pies! To Meera, for all the time dedicated in creating our awesome Kickstarter video and dealing with my bloopers and shyness on film! To Jenny at Sidecar Creative for turning my kindergarten-like sketch into an awesome logo! To all the family and friends who have served as guinea pigs in our pursuit of great Neo-Neapolitan pie, helped with topping ideas, and especially those who were subjected to our early failures and still came back for more! (You know who you are!)

Risks and challenges
We've worked to research all the potential obstacles including licenses, inspections, and other aspects of serving food at the farmers market and strongly believe we're ready to move forward! That being said, being a vendor at a farmers market is always a slight disadvantage as there are less spots for vendors as room is saved (appropriately so!) for farmers and producers. We have cast a wide net and spoke with farmers market managers to ensure we do everything in our power to bring our pizza to you! In the unlikely event we're not selected as a vendor at the farmer's market, we'll work to set up a few events at local public places to make sure donors can collect on their prizes! We want to make sure you're rewarded for your generosity!
Remember that funding on Kickstarter is all or nothing, which means if we don't make our goal, we won't be able to mobilize our oven, bring our Neo-Neapolitan pies to the farmers market, and will be stuck at home making pies for just friends and family.Learn about accountability on Kickstarter
