Wandering Table + Yards Bruncheon=Inland Northwest Love
This project actually started 4 years ago. We started a wandering restaurant that was all about the food. All about things we could acquire through local farmers and producers, things that give you a sense of seasonality. I won't say it was all easy, it started a little rough and a little unrefined, but people could see the passion, creativity and love for what we do. Slowly as we grew, honed in on our technique, service and ability to create a restaurant on a beach or in a park, the "restaurant" got better. We now have a chance to create two restaurants with real walls and floors. A place for us to call home and to give our guests an experience that comes from our background and our soul. We want to be able to offer foods that are approachable and that are affordable for everyone!!
Why Two Restaurants?
For us to be able to create these restaurants we need help with funding our beginning inventories. With your help these two restaurants can become fully functioning Inland Northwest Cuisine eateries. The reason for the two restaurants is #1 to have two different styles, one a little more of a casual contemporary diner, the other a little more similar to our current Wandering Table in format featuring small plates with style. A choose your own adventure sort of meal. #2 is an opportunity for the team and myself can continue grow and nurture our style.
The bonus is they are next door to each other creating an outdoor cafe between the buildings, allowing our guests to dine at either restaurant while enjoying the weather. Also with the two different concepts, one being breakfast and lunch (Yards) and the other being dinner and cocktails (Wandering Table) we will be able to create a full day experience without competing for business. The area where these two restaurants are being built will be one of the best spots in the Inland Northwest to capture the food scene as well and we want to be a part of that!
Wandering Table will feature small plates/tapas style dining. We will have American cuisine, like meatballs and chicken wings, but presented in smaller portions so you can pick and choose a few different bites of food instead of one large entree. All of these dishes will be prepared using local products from no further than 500 miles (and that's just so we can reach the coast) unless it's something of a specialty like Proscuitto di Parma. We will also specialize in classic cocktails with a little twist giving them our special, but familiar twist.
Yards Bruncheon will feature a brunch menu all day, everyday. Brunch will no longer be held hostage to weekends only! This restaurant will be a little more casual set in a contempary diner atmosphere featuring again high quality comfort foods utilizing Inland Northwest ingredients. We want to be able to create comfort foods that are done in a little different style, but will be approachable for everyone.

Risks and challenges
We are going from a stable restaurant world on to our own projects which are a little tough at first. Obviously this is a huge undertaking and is a little frightening to go out on my own. I am willing to risk this for a chance to create in an uninfluenced atmosphere where food is the leader and will guide our decisions.
There are quite a bit of challeneges coming our way. With my background alone, spanning from Executive Chef at the Coeur d' Alene Casino and Resort overseeing 8 food venues and $10 million a year in sales, to working in fine dining at Brix restaurant, to everything in between, we will be able to combat our obstacles with a full tool kit and an optimistic attitude. The things I have learned after being in this industry for over 17 years will help us stay on course with what we need to do and get accomplished to be successful. This is not even to mention the combined experience of close peers, coworkers, and my brother, chef Ryan Stoy who I have had the pleasure of working with over the years who will all bring their own depth and knowledge.
Yards Bruncheon is already under construction with Wandering Table following right behind. Hopefully we will be opening around Yards around February and Wandering Table around April. We will keep our backers up to date with photos of our new born babies as well as any developments we are working on. You will be the first to know!
