Well here we are, just about a week from opening the doors and getting our beers flowing into your glass. Barreled Souls Brewing Company has been a dream of ours for a very long time and a work in progress for almost two years. Words can't do justice to express how excited we are to get this started.
Our dream here at Barreled Souls is to open a brewery that will introduce a wide variety of exceptional beers, along with a new brewing method, to the vibrant Maine brewing scene.
The brewing method incorporates the use of our own version of the historic Burton Union System, making us, as far as we know, the only brewery in the world that ferments 100 percent of their beers using this system. The reason we chose to ferment beers this way is twofold. The first, and really most important, is that the system allows us to harvest an exceptionally healthy and clean yeast crop from every batch. The yeast that makes its way up and out of the barrel is the healthiest and strongest yeast in the batch. In this sense, we're actually selectively breeding our yeast, choosing only the best of the best to use in subsequent batches. The second reason is the character that the oak imparts on the beers. Even though most of the oak "flavor" has already come out of the wood, there is still a chemical reaction that occurs between the yeast and the wood when the wood is exposed to active primary fermentation. This reaction produces subtle flavor and aroma compounds that will add further complexity to all of our beers.
In addition to making excellent and unique beer, it is also our dream to create a venue where people can come in, relax, spend time with friends, make new friends, and sample some amazing beers. This is what we'll be offering five days a week in the Barreled Souls tasting room. Having the chance to share beers with our customers, talk about the beers and the production process itself, or whatever other topics come up is a huge part of why we're doing this.
Now to the reason we're in need of raising some extra capital:
We plan to take nearly half of all the beer we produce and age it in used oak barrels. Our hope is to have around 100 barrels full of our beers aging right in the tasting room. We'll be putting a variety of beers into the barrels, depending on the type of barrels we're able to get. We want to work with barrels that have previously held all sorts of different products: bourbon, rye, brandy, scotch, wine, rum, tequila, etc., to showcase the range of flavors and aromas that can be imparted on our beers by these barrels. These beers will sit in the barrels as long as we feel is necessary in order to properly allow the flavors and aromatics to meld into a unified product. This can take anywhere from three months to more than a year. Once we feel the beer is adequately matured and has reached its peak, we will bottle it up, let it condition until the proper carbonation level is reached, and then sell it to you at special event parties held in the brewery tasting room and grounds.
Here’s the catch: Unfortunately, we did not anticipate the massive increase in demand for used barrels that has occurred over the past two years. Not only have prices gone up (averaging around $200 a barrel), but the availability has nearly evaporated. In order for us to get barrels in the quantities and varieties we want, we need to set up contracts with some of the large barrel brokerage houses. These contracts require that we pay for the barrels in advance. When we put together our business plan and cost projections these large upfront expenses were not required. As such, in order for us to be able to get these barrels, we need to raise $15,000 and reserve them now.

Risks and challenges
We feel entirely confident that we can fulfill all of the rewards we're offering. The Barrel Society membership is certainly the most ambitious on our part, as we're promising ten varieties of barrel aged beers to every member. If we raise the funds we've set out for, we will have no problem obtaining the barrels needed to achieve this goal. It is possible that the membership popularity will exceed our expectations and, though we feel that's extremely unlikely, it would result in us having to delay delivery of all ten varieties.
The greatest risk for backers comes from the fact that we are a start up business doing something completely novel in a competitive beer market. This is not a proven business model, but we've decided to go for it because we believe it will be a huge success and it's what we’re passionate about bringing to the beer community. We are both fully dedicated to making this business a success and will be diligent in assessing the health of the company and maintaining a willingness to be flexible and adapt as needed to stay profitable and keep the beer flowing.Learn about accountability on Kickstarter
