The Neighborhood Butcher Shop is making a comeback in America and we think it's San Diego's turn to have its own whole animal butchery that sells sustainable and local meats. We're at the home stretch of our journey, ready to cross the finish line and we'd like you to break the ribbon with us.
For years we have been hosting or attending BBQs and meat-focused meals where the same question was often asked, "Where did you get the meat?" The answer was usually, "the grocery store." We considered ourselves health-conscious people, and yet we were buying and eating meat from factory farm sourced stores. Why? Because we felt that we had no choice.
As we learned more about meat and local agriculture we found ourselves at a point where it not only made sense to open a specialty butcher shop in San Diego, but we felt it was necessary. Five years ago we took a deep breath and made the decision to begin a journey that would bring a whole animal butcher shop to the city of San Diego.
Neither of us were the son of a butcher, so when we say journey - we mean it. For the past five years our passion for the craft has pushed us to study local production lines, garner relationships with sustainable ranchers, labor in the back of butcher shops and train at L.A.'s famous Lindy & Grundy Meats.
Now we are asking for San Diego to help us take those finals steps to bring a butcher shop to the neighborhood.
Our mission is to re-invent the traditional meat counter by building the first exclusively local, whole animal butcher shop in San Diego. H&T will provide San Diego’s communities with the highest quality sustainable meats and products through a brick and mortar location as well as a CSA program. Our meats and products will never have been exposed to hormones, antibiotics or other synthetic chemicals. In addition to customary cuts, we will offer non-conventional cuts of meats, meat products, produce and artisanal foods crafted in-house and by neighboring farms and small businesses. Moreover, in an effort to reverse the damage factory farming inflicts on animals, humans and the environment, we seek to educate the public on the benefits of sustainable butchery and supporting local, community-based agriculture.

How we will use the proceeds from this Kickstarter:
We are putting together this Kickstarter project in order to get us up and running beginning with our monthly CSA program and securing a storefront location (We are currently looking at several great locations in the North Park area). The CSA program is a way for us to keep moving toward our final goal of a brick and mortar shop and continue to connect to our community. We are also looking to fund several pieces of equipment including a commercial vacuum packing machine, coolers, and freezers that we will need in order to provide all of the aforementioned services in our shop when we open.
We need your help and support in getting us further down the road to being a brick mortar whole animal butcher shop. Any funds not used for equipment will be used toward securing our location, obtaining permits, and paying our architect, engineers, contractors, and attorney - All of which are required by state and local authorities to start a brick and mortar location.
Sausage, Pork and Lamb Classes - These are not run-of-the-mill butcher classes. You WILL actually learn how to butcher these animals and/or make sausage. You will be cutting, slicing, sawing, tying, and packaging meat. There will be NO more than 6 students per class. If the class does not fill up, we will still hold the class for the Kickstarter backers (even if its one student). The classes will be held at our shop after hours or on "No Meat Mondays" when the shop is closed. Each student will have full access to the shop. Students will see how we work from the inside out. Students will get step-by-step instructions from our head butcher on how to process these animals into retail cuts. A great advantage of having a processing area open to public view is: If you have any questions after you leave the class, come back and we will show you again!
Beef Classes - H&T will NOT be offering beef butchering classes to the public. This is exclusively for Kickstarter backers. Learning to butcher a steer is considerably more difficult than butchering a lamb or pig. There are only a handful of butchers in the United States that know the RIGHT way to butcher a steer. Beef butchering classes will be held on "No Meat Mondays" while our shop is closed. Only ONE student will be in each Beef Butchering class. You will spend the day one-on-one with our head butcher and learn how to properly break down a quarter or half of beef all the way to retail cuts.
These are amazing opportunities for anyone who wants to get into the whole animal butchering industry or simply wants to save money by butchering at home.

Risks and challenges
Trey and I have been working on this project for the past few years. Our biggest risk is securing our spot and starting the construction process. Our biggest challenge is funding. We have the know how, we have the ranchers, we don't have the funds. We are pursuing a mix of Kickstarter funds, private investors funds and bank loans to make our dream a reality. If any set backs arise such as construction delays, permit delays, etc. we will keep at it until they are overcome.
We are expecting exponential growth in sales volume and we need to make sure there is no lapse in quality. To help ensure this we’ve developed strong relationships with a network of local farmers and ranchers to ensure that we will be able to get enough high quality, pastured meat we need to supply our shop. We have also built strong relationships with local restaurateurs, chefs, and culinary schools to recruit the best culinary minds we can find to work in our shop.Learn about accountability on Kickstarter
