These are not run-of-the-mill butcher classes. You WILL actually learn how the butcher these animals. You will be cutting, slicing, sawing, tying, and packaging meat. Pork 101 and Lamb 101 will have NO more than 6 students. If the class does not fill up, we will still hold the class for the Kickstarter backers (even if its one student). The classes will be held at our shop after hours or on "No Meat Mondays" when the shop is closed. Each student will have full access to the shop. Student will see how we work from the inside out. Students will get step-by-step instructions from our head butcher on how to process these animals into retail cuts.
