It takes money and time to make bourbon. Of course distilling equipment and a solid recipe are important as well. The more barrels of whiskey we can put away now, the more bourbon we will have to share when it is ready.
Our stretch goals would also allow us to branch out into other styles of whiskey.
If we raise $30,000, we will have enough money to make the sweeter Double Barrel Bourbon, which takes 3-4 years to reach maturity.
If we raise $50,000, we will work with our neighbor, Rohrbach Brewing Company, to create a Scotch Style, All Malt Whiskey that will age in our used Bourbon Barrels.
If we raise $80,000, we will have enough money to make Bourbon that we will finish in Port and Sherry Casks. These cask conditioned whiskeys have truly unique flavors acquired from the original liquors aged in this wood.
And if we raise $100,000, then our Head Distiller, Jason Barrett, will dress up as Paul Revere and ride through the streets of Rochester on horseback, waving his flag to announce that "The Whiskey is Coming!!!"
Risks and challenges
Since we have already received our Federal Basic Distillers Permit, and we are already well into the licensing cycle with NY State, the risk of us not becoming operational is limited. All of the other aspects of the project are complete: we have found suppliers for the barrels, we have contracted with farmers for the grains, and our equipment itself is all in place and operational.
