About this project
We’re Lauri & Matthew Spitz, founders of Moustache Brewing Company, an artisanal brewery that makes craft beer for the craft beer drinker.
We’ve always been into experimenting and trying new things, whether that be with food, music or hair styles. We decided to learn how to brew beer when we realized that we wanted to try something different than what was offered at our local bars here on Long Island. It seemed that the only way we could get interesting beers on tap was to go to New York City!
In 2005 we brewed our very first batch of beer, an Oktoberfest. Five weeks later we invited our friends and family to taste our creation. We received such an overwhelming and positive response, that we knew we were onto something and it encouraged us to continue brewing our own beer. Soon, our friends and family would start asking us what we were brewing next, and when would it be ready for them to try!
Since that first batch of beer, we have tried many different recipes and have come to learn the true art and science behind brewing craft beer. From our Mojito Pale Ale to our White Russian Stout we’ve worked long and hard hours to create beer that is intriguing and that appeals to beer geeks like us!
Over the last few years our beers have been highlighted at festivals around Long Island, New York as part of our local homebrewer’s club. We’ve come a long way since that first Oktoberfest in 2005. Lauri is the founder and runs the Long Island chapter of Girls’ Pint Out, a ladies educational craft beer group. She also serves as the secretary for Long Island Beer and Malt Enthusiasts. Matthew has served as head of the brewing committee for Long Island Beer and Malt Enthusiasts.
Now, 7 years later we are on the verge of opening our own microbrewery. This will allow us to share our love and passion for craft beer with a wider audience.
Moustache Brewing Co. will be a 15 barrel (BBL) microbrewery providing fresh, local, artisanal beers for the Long Island and the New York metro area. The beers are based on brewing’s tradition with a nod to the trends and uniquely changing future of craft beer. Our year round brews will be our Porter, ESB and the Hop Trilogy, which includes our Pale Ale, IPA and our Imperial IPA. We will also feature a rotation of seasonal brews plus whatever else strikes our fancy! The brewery will be will open to the public for tastings, beer classes, and growlers for purchase.
We would not be where we are today without the help of so many others before us. From learning the basic principles of brewing to questions about opening our brewery, we have had other brewers to turn to. Moustache Brewing Co. will also be an education resource for those interested in learning more about our craft. We will offer various classes, talks and tastings on a wide range of topics from principles of brewing to beer styles. We strongly believe in educating others and paying forward what was given to us.
We Need Your Support!
The process of opening a brewery in New York is not for the faint of heart. Before we can start commercial production of our beer we need to be licensed with the State and Federal government. This process will require us to secure our brewery location with a lease and set up our entire brewing system before we can even apply for these licenses.
Then, we wait. And we wait some more. The licensing approval process can take at least 6 months. Throughout this waiting period, we will still be paying rent for a brewery that we are not allowed to use until the licensing is approved.
Our goal is to raise a minimum of $25,000 in just 5 weeks. So of course, we can’t do this without you!
The way Kickstarter works is all or nothing. In order for us to receive the money we raise, we MUST meet our goal. If we do not meet our goal by May 23rd then we don’t get any money and you don’t get any beer. And we know you want the beer!
The money raised from this Kickstarter project will get us the startup capital needed to get up and brewing. It will help us pay for things such as the above-mentioned rent, brewery equipment, kegs, and ingredients for our first batches of beer.
As soon as our project is funded, we will secure our brewery location, set up our brew house, submit our license application and then wait for approval before we start commercial production. We plan to have our beer on the streets within a year.

If you're in an international location Hawaii, Alaska or Guam, we kindly are asking that you add $10.00 to your pledge to help cover some of the expense of shipping you your rewards. If you are on Long Island, we are also going to do a few pick up days at some of our favorite bars around the island so we can have a beer together and we can put some of that shipping money back into the brewery. Please note that all the swag will be available around July. For the other incentives, like brewing with us, and having beer in the tasting room, it's hard to say when those will be available but most likely it will be year end. We will keep everyone posted with our progress.
