Cheesemaking is a labor that we love. We've watched the sun rise as the milk truck arrives and we've watched the sun set as we've hooped the curd. And we know we want to do this forever.
As we begin our fourth year of production, have some awards under our belt and have been slowly expanding out of the Midwest, we have learned invaluable lessons.
We've learned what our customers love and would like to see more of. We're seeking $25k from you, our most sincere supporters, because we need modern, efficient cheese forms, equipment and a cave to grow and add the new cheeses you've been asking for: silky, rich and mushroomy bloomy rinds, tangy, creamy fresh sheep milk cheeses and more.
Specifically, we are looking to purchase block molds for bloomy rind cheeses (think camembert), a small machine to help us produce fresh cheese with a longer shelf-life, and we'd like to fund the construction of a small aging facility where we can age cheeses that we can't properly cure in our existing rented space.

Risks and challenges
Making cheese is no joke--we are licensed and inspected and will continue to do our utmost best to produce the most delicious and safe cheeses we can. In addition to undergoing all legal inspections, we are completing a third party audit that will allow us to go above and beyond regulated standards for safety.
Beyond the risks inherent to making a product like cheese, our biggest challenge is finding a place to put our aging space that is affordable. We are looking at a number of options, from purchasing and leasing land to converting part of an existing structure.
