Let us tell you about Raw Eatery & Market. Raw is a collaboration project. Our vision is to connect community and earth in a sustainable cycle. Beginning with nurtured regional ingredients and ending with not only healthier lifestyles, but also a flourishing local economy; we aim to link farmers to the people.
Raw will offer Calgarians a welcoming and responsive environment to enjoy nutrient dense food, prepared (when possible) with locally sourced ingredients. We want our menu to change like the seasons- and with the seasons. That’s why co-founder Megan Pope (Graduate of University of Alberta’s Nutrition and Food Science) bases her recipes on changing produce availabilities. We will offer specialty classes in raw food preparation, health oriented cooking, plants, gardening, and sustainability, as well as offer regional foods and health products for retail.
Using local resources and teams, Raw will develop and execute citywide sustainability initiatives to improve the city's overall carbon footprint as well as create cyclical growth in farming culture and economy.
Why is this project important to us?
Megan is a nutritionist with a desire to create and provide for a healthier population. She has worked on community nutrition programs and has seen first hand the difference that comes with healthy eating and lifestyle choices. Growing up in the beautiful farmland of Alberta, Ali (NAIT Broadcast Television Graduate) finds solace in nature and has a deep appreciation for the outdoors. This evolved into a passion for sustainability and environmental preservation.
When we realized that our ambitions could align and develop together it became our goal to create a business that embodied all of our values and worked with the community to involve everyone in simple, everyday choices that create larger impact.
When it comes to our community, health, and environment we don't want to make compromises- we don't want you to either.

Starting with a foodblog (posts still available on thecollectiveraw.com) we began testing recipes over a year ago. We received informal training working at an eco-resort restaurant preparing multi-course meals for large groups using daily changing menus. During this time we were also able to gain valuable garden, farm, and sustainability knowledge.
The business aspect of Raw began at the same time. Working through budgeting to optimize the use of fresh ingredients and contacting suppliers lead to the first copy of our summer season menu being complete.
We have secured a location in Calgary in an established and high traffic area, and will begin renovating to have it prepared for a June opening.

Our menu will be largely, but not exclusively, made up of plant based foods. Raw will not be limited to a specific type of food but will emphasize vegan dishes and raw ingredients.
Because of the seasonal produce available, the menu will experience frequent changes. However, we're aware that not everyone likes change! So, to counter this we will be using a system of favorites to bring back popular items as regularly appearing dishes.
What will the funding be used for?
Our building is beautiful, and the location is ideal. But, it requires some renovations to become a usable restaurant/market space. We will also be purchasing appliances and furniture with the money raised, as well as supplement our initial inventory.

From the bottom of the page and the bottom of our hearts. As much as we need the initial capital, it is equally as valuable to have the support system of a community of backers. Knowing that you are joining us through all the ups and downs of opening a new business creates strength, and we are so excited to share the end result with everyone!
Risks and challenges
This industry is overflowing with risks. That’s why we have spent a large amount of time in the planning and preparation stage. Some of the biggest challenges we anticipate are:
Expenses caused by renovation of the building may be higher than anticipated. To combat this, we will be purchasing used appliances and kitchen equipment that can be upgraded after the first year of operation.
Raw and vegan lifestyles are in the preliminary stage of development in Calgary and Alberta. There is a risk that the trends will not progress, or that they will progress at a slow rate. However, evaluation of restaurant and health trends has displayed the movement is swiftly gaining popularity. We strongly believe the innovative and young population in Calgary will be driven to same tendencies as other major Canadian cities.
By using produce and fresh ingredients, supplies will not have a long shelf life, causing a risk of high waste. To prevent this, supplies will be maintained based on customer traffic, and daily numbers will be closely monitored to keep supplies reflecting busy/slow times.Learn about accountability on Kickstarter
