What is The Suburban?
The Suburban is an upscale sports bar that specializes in gourmet burgers, pizzas and hotdogs. It is a place for friends to gather for a night on the town, families to come celebrate winning a little league game, and foodies to indulge in their deepest desires. The meaning behind our name comes from our goal of taking trendy, urban cuisine and substituting it into a suburban neighborhood. Built in an old warehouse, The Suburban will provide an industrial atmosphere combined with the comforts of your favorite foods to create Excelsior’s new favorite hangout.
Where did the inspiration for The Suburban come from?
The concept of The Suburban began in March of 2013 when Cindy and Kelsey applied to be on the Food Network competition “Food Court Wars.” The competition required Minnesotan teams of two to conjure up a “locally inspired” food court restaurant concept to be placed in Burnsville Mall. After a series of casting interviews and completing a business plan for their food court restaurant, Cindy and Kelsey had created Lena’s Kitchen: a Scandinavian inspired bakery café serving Swedish meatballs, lefse, and bundt cake. Unfortunately, Cindy and Kelsey were not cast for the competition, but instead were made alternates for the show. Fortunately, they had discovered, along with Bob and Ashley, an extreme desire to open a restaurant, preferably in their home town of Excelsior, MN. Since they were no longer restricted by the food court format, the Bersets began brainstorming a new concept for a full service restaurant and bar.
Why Burgers and Pizza?
Once we knew we wanted a full restaurant and bar in Excelsior, we knew exactly what we wanted to serve: burgers and pizza. Burgers because of a lifelong, family love of well-crafted, delicious burgers. Pizzas because of our family’s experience owning a franchise of pizza restaurants in the Twin Cities, Frankie’s Pizza, Pasta and Ribs. When we combined these two loves, we realized we were on to something. Who doesn’t like burgers and pizza?
Where is The Suburban?
After we had the menu and general concept in place, we had to find the perfect location. Since downtown Excelsior has a limited number of retail spaces, we knew that timing would determine our future. While considering the former Ming Wok and Biella locations, we came upon the former Automated Building Components building at 352 Third Street, Excelsior, MN. Although slightly off the main drag, it offered everything we were looking for: great parking, visibility, a central location, and an industrial warehouse vibe. We knew the moment we stepped inside that it had the potential to be something really special. Because of its current availability we began drafting the business plan for The Suburban.
Our desire to open a restaurant in Excelsior is rooted in our experiences working, living, shopping, and dining in Excelsior. We understand the consumers because we are the consumers. We also understand the businesses because we have worked for the businesses (Cindy at Eagle Mill and Stone Wings, Kelsey at Cynthia Rae, and Ashley at Cynthia Rae and Jake O’Connors). To us, people in Excelsior are looking for a social atmosphere, a place they can bring their children, hang out after a high school sporting event, or kick back a few once they are empty nesters. Some residents want to watch the game while dining, while others want a nice glass of wine and healthy options. We have made sure to focus not just on what we want but what the Excelsior consumers want in a dining experience.
Who are we?
Residents of the area, and all Minnetonka High School grads, the Bersets have deep roots in the community. Bob and Cindy grew up in the area, and after moving to Arizona for a few years, they came back home to raise a family. They opened four pizza restaurants in the mid-90s and eventually sold them to focus on their careers. Now that the kids are all grown up, it is the perfect time to start a family business. Kelsey, the oldest daughter is in her final semester at Hamline University School of Law, and is the ultimate foodie. Ashley is finishing up studying Marketing at the Carlson School of Management and is our social media expert. The four of us are big dreamers and hard workers, which is the reason we are so excited about this new adventure!

What happens if the pledge amount is not met?
For those that are unfamiliar with Kickstarter’s format, a business does not receive their pledged money if they do not meet their Kickstarter goal. Therefore, if The Suburban does not reach its goal of $25,000, it doesn’t receive even a cent from its supporters. This is why we need you to help us reach our goal of $25,000 to get The Suburban open!

Our goal is to be open by November 1, 2013!
Risks and challenges
As with any new restaurant, there are a series of hurdles that must be conquered before you can open for business. In order to make sure the process runs smoothly, we have already been in contact with restaurant designers, contractors, and suppliers to receive accurate bids. In addition, we have been working closely with the City of Excelsior as well as the Excelsior Chamber of Commerce to anticipate any difficulties we may have. At this point things are running smoothly and we believe we are fully prepared to tackle any challenge that comes our way.Learn about accountability on Kickstarter
