Kauai Kombucha is a multifaceted project. I'm combining my love of brewing Kombucha with my love of the island I live on to create a healthy drink and also contribute to a no waste movement.
What exactly is Kombucha?
Kombucha is a fermented fizzy health tonic that has been brewed for century's. People drink it all over the western world to increase energy and their overall health. The fermentation process creates strains of 'good' bacteria and acids that your body needs to have a healthy digestive system and also to detoxify and aide every organ in your body.
The way I make kombucha is a two week fermentation process where I combine organic teas, sugars, and a live culture. This is the fun part for me, I get to experiment with all sorts of flavors and sugars to create just the perfect batch. The live culture is known as a S.C.O.B.Y ( symbiotic culture of bacteria and yeast ) and it grows on the top of the Kombucha brew, taking an almost mushroom looking form. Kombucha is wonderful this way because every time you brew one 2-week batch of kombucha and use one of the scobys, another scoby will form leaving you with two by the end of the batch. This allows you to give your second scoby to friends/family for them to brew their own Kombucha. The great thing about these scobys is they will forever reproduce new scobys and so on. This making kombucha itself inherently renewable.

How will Kauai Kombucha contribute to a no waste movement?
This project is much more than brewing Kombucha for me. I feel like Kauai has given me so much, I want to give back to it. Thus far all kombucha sold on this island is shipped in from the mainland, and then all bottles are discarded into our landfill. Upon doing further research into our recycling system, I found that there is only a little system in place here, and even most recycled glass essentially gets crushed and put straight into the landfill. Plastic is just as bad as this, and the centers won't even allow wine bottles to be recycled there. Trash is piling up, there's even been talk about shipping our trash to other islands or to the mainland. Instead of this madness, I want to help this problem head on. I thought, "Why not ship less products here by learning how to make my own, and also use all recycled glass to brew and bottle the product?"
75% of the brewing vessels I will purchase are recycled already. The other 25% of the vessels used will only need a one time purchase and will be used over and over again to brew. I'm focusing all efforts here on sustainability and hoping that no purchases for this product will ever be thrown away or wasted. That all materials will last longer than a lifetime. Even the brewing process itself needs little energy, kombucha fermentation thrives in naturally warm dark places. So I'll need only a little electricity to create the beverage.
I'm using all local produce to make the different flavors. Picking up straight from the farm, sometimes even straight from the tree. There will be no shipping or packaging involved with any of the produce. So at the same time supporting this project will help support the local organic farmers who are also making this island more sustainable for future generations. Lastly, most water used for brewing will be used from an already tapped small spring from the north shore. The batches made from this water turn out exceptionally tasty, provide a pure beverage, and creates zero waste and energy by going straight to the source again. There will be zero plastic in any of my procedures.
So get this, not only are the attaining and brewing methods waste free, but the bottling and distributing procedures are as well! I'm using all recycled glass found on the island to bottle the kombucha. Even better, I have created a system where a person can distribute the kombucha by the ounce at a few stores around the island. This allows people to fill up their own bottles and be able to be directly apart of this project.
Kombucha is extremely popular here, almost every grocery store sells it. But no stores sell locally made kombucha. I not only want to provide it in stores but be a bigger part of the community by sharing it at farmers markets and community events. I will even host events where I can teach people how to brew their own kombucha. So in the end my goal here is to give back, to teach, to be even more apart of this island.
Why am I rewarding your donations with items like washcloths, candles, lip balms, hats, and bread boards?
Firstly, I would love to reward everybody with fresh brewed kombucha. But since I am on an island it will defeat the purpose of sustainability to mail off bottles upon bottles of kombucha. However, although I cannot mail out kombucha I would love give the donators on the island the ability to decide between the off or on island gifts. Unfortunately I can't give that same option to people who don't live here, but not to worry, I've come up with some very creative ways to reward donations coming from off the island.
Everyone of these items I personally make. They are all used with organic or recycled materials. Just like the kombucha, the purpose of giving these awards is to show how you can be more attached and closer to the source of production with your everyday needs. Note that all items hand made for you will have a unique tag or embroidery on it representing either Kauai or Kombucha. Some examples of these rewards and why I chose them are as follows.
* One washcloth alone takes me 1-2 hours to knit. Although that seems like a long time, they will last a lifetime, especially with the high quality organic cottons that I use.
*The yarn used for the hats I knit is actual wool that has been procured, spun, and hand dyed on the island.
*The lip balm I try to keep it local by using organic beeswax, honey, and coconut oil from the island.
*The soy wax candles are poured into recycled containers that would otherwise be thrown into the landfill as well.
*The bread boards are made with scrap wood. They are designed, sanded, and oiled beautifully. The wood used is high quality wood found on the island, these pieces are excess scrap pieces tossed aside. But we've found a way to make something beautiful and useful out of them!
These items take countless of hours to make. But knowing that I'm giving back to a greater purpose is what makes it worthwhile. I could not thank you enough for being a part of it with me. Without you I couldn't do any of this.

So how do you know the money you donate will go to good use?
- I have already set up a commercial kitchen that has been certified and is ready for production
- I have had all lab tests done and passed for the legality's of brewing and distributing this beverage
- I have put countless hours into research and development on the brewing process and needs of the kombucha to create the perfect batch
- I have spent the time figuring out exact amounts and best ways to acquire ingredients necessary to brew kombucha
- I have also already done taste tests around the island at local stores and businesses wanting to help distribute this kombucha
I have done every step I can, now all I need is the financial backing for this project. If my goal is met, I can have this product ready to be in every store and market on the island within one month!
So what exactly will the money be going towards?
- The most expensive part is the brewing vessels. Being that I want to use all glass, or all high quality oak barrels that will last longer than a lifetime.
- A good portion of the donations will be going to the first initial round of s.c.o.b.y.s ( the cultures ) coming from a quality source.
- They will also go towards the 5 gallon containers I will be using to distribute the kombucha by the ounce at the local stores and markets.
- Some of the donations will be spent to keep the already certified commercial kitchen afloat with monthly rent payments
- Smaller donations are so appreciated, they will go directly to brewing necessities. Like ingredients, kitchen utensils, ph testers, stainless steal pots for tea making, measuring apparatuses, and so on...
- Other donations will help host community events where I can share information on how to brew your own kombucha.
