Two and a half years ago, SALT & TIME started as a small, artisan salumi company selling our products at Austin Farmers Markets. In that time we’ve been blown away by the response we’ve received both locally and nationally. As we have grown, our main goal has been to open a Butcher Shop that will make Austin proud. We love what we do and we love where we do it, and it is an honor for us to be able to be part of such a great food community. We have built relationships not only with our customers, but also with the farmers we buy from and the food community at large. With the opening of our retail Butcher Shop, those relationships will become even more meaningful as we are more fully able to fill the Butcher’s traditional role as a link between farmers and consumers.
SALT & TIME has come a long way in the last few years, and now we are on the verge of achieving our goal. Our retail Butcher Shop will allow us to greatly expand the products and services we offer our customers and to play a bigger role in our community. We look forward to inviting food lovers into our shop to buy a roast, grab a sandwich, take a class and meet a farmer. We are so close to making all of this a reality. We have our lease and building permits, and construction is finally underway! We’ve also been preparing for opening by stocking prosciutto away for almost 2 years!
We need your help to push us over the top, to make sure that everything about our shop reflects the standards that we apply to our products. To that end, we are working with local craftspeople to make our furniture, paint our signs, design our aprons, and to bring the spirit of Austin alive in side our doors. Because of the awesome response we've had and the logistics of getting everything shipped, T-shirts, sliced meat and Gift Box rewards from pledges made after December 15th will not be shipped until February 2013. Certificates for the Butcher Classes and Salumi Research Group will still be mailed on the 20th.We know that he holidays can be a hectic and expensive time of year, so most of our rewards are designed to make great gifts, whether for your loved ones or for yourself! We will ship rewards by December 20th. We will mail certificates for the Salumi Research Group, butchering classes and ranch tours, and will follow up with scheduling information for classes and tours.
A little more about SALT & TIME:
SALT & TIME is owned and operated by two butchers, Ben Runkle and Bryan Butler, who share a passion for quality and a commitment to sustainability and animal welfare. Runkle learned to cut and cure meat in Northern California before moving to Austin in 2009. Butler has been a butcher for over 15 years, and is a familiar face to Austinites who have shopped at Wheatsville Co-op and Fresh Plus Grocery. Both are proud members of the Butchers’ Guild, an organization of Butchers and Chefs from around the country who share a commitment to quality, ethics and craftsmanship within our trade. Risks and challenges
Ben and Bryan have been preparing to make this leap for well over a year. Despite ours years of experience and success to date, opening a full service retail store poses a real challenge for us. We will see exponential growth in volume and we need to make sure there is no lapse in quality. To help ensure this we’ve developed strong relationships with a network of farmers and ranchers to ensure that we will be able to get enough high quality, pastured meat and we have slowly but surely been building a staff of passionate and talented butchers and cooks.
