About this project
Hi! We're the Bitter End crew.
We've been working on the remodel of The Bitter End since November of last year. It's been a crazy and long haul, but the dream is still there and we're so close we can taste it (it's like a combination of hops, garlic, and cherry-chipotle wing sauce)!
For those of you who have been watching our progress and popping your head in to the construction zone, thank you for all the moral support!
We've cleaned it, we've sanded it, we've painted it, we've put shiny new things in it. We've run new beer lines, replaced all the equipment, expanded the bathrooms and dusted it with a bit of technology (or a lot). We've tested dozens of new recipes, shaken cocktails and hired some of the best craftsmen in town to rebuild her. Late night we may have made friends with a few ghosts down in the basement, and on game days watched our friends file through the gates of Jeld Wen to support our awesome Timbers! And all that because we knew that sooner or later we'd open the doors and do what we do best: serve awesome food and drink to our wonderful neighbors once again (in a much cooler and updated space).
We've put everything we have into this project, and whether you are a Portland native, a new arrival in town, a visiting MLS fan or one of the many wonderful tourists that visit our great City, we think you're going to love our Pub.
Belief beyond all reason.
But it is hour 11 1/2, (or the 85th Minute) and while the last coat of paint dries and we rally our new troops to train, we are asking for just a tiny bit more belief, support and push towards our New Year goal-- getting the doors open! With your help, we can be your home for Christmas, and New Year's Eve, and the BCS championship, not to mention the "other" National Holiday aka as the Super Bowl. And when it comes to your birthday or, well, Timbers season we are going to have your back, your beer, and all the good grub you can imagine.
So fans of the End, of Portland, or friends and family and believers, PLEASE be there for us now so we can be there for you for the next couple decades of The Bitter End!

Risks and challenges
The first few months of any new business are an exciting and challenging time and generally set the pace for the first year of operations. Having opened over a dozen restaurants over the last 20 years, we are well aware of the first year restaurant pitfalls-- the greatest typically being the under-capitalization of a project. No matter how well designed a business plan, without the proper working capital a new business can find itself straining to get by.
At this point, we're offering to our supporters the fact that we have successfully taken our project to the 85% mark, hurdled the permits, the mystery pipes in the walls, the unexpected delays, and have completed the majority of buildout, training and concept development.
The assistance we seek on Kickstarter is to offset the seasonal challenges we anticipate facing, a post-holiday decline in business, and to bridge our sales until we reach the full swing of Timbers season (which the neighborhood benefits from March-September). The original intent was to open mid-summer, and we now simply face opening in a slower sales season than we had planned. Kickstarter will provide the necessary bridge capital mentioned above.
With over 25 years of combined experience in the restaurant and hospitality industry, the Team has an acute sense of operations, business and a proven track record for adjusting purchases, staffing, sales building techniques and thinking on our toes.
