COPPA Artisan Cured Meat produces hand crafted cured meat products using only local, sustainable, and humanely raised animals.

WHAT WE ARE ABOUT

The passion and philosophy that drives COPPA Artisan Cured Meat is simple; to create the best salumi and cured meats using the highest quality ingredients.

HOW WE DO IT

At COPPA, making a quality product means using the best possible ingredients starting with the meat. We use whole heritage breed pigs. The pigs we use are raised locally, humanely, and sustainably without the use of hormones or antibiotics. They are then butchered by hand and the best cuts are selected for each product. The meat is cured using high quality sea salt, spices and herbs. They are then naturally air dried and aged in a climate controlled room. We never inject our products with brine or apply heat to speed up the process. We believe quality cured meat takes time for the natural flavors to develop.

WHY WE'RE DOING THIS

What started out as just a side project has quickly grown in popularity. To keep up with the demand I have decided to open up a retail location to bring our delicious cured meats to the community. This requires the equipment to produce our products on a larger scale.

WHAT IT'S GONNA TAKE

Although all of the animals we use are butchered by hand, and our cured meats such as coppa, pancetta, lardo and guanciale are made by hand, they need a curing room large enough to accomodate the larger quantities for our Elmwood Street location. Also our dry aged salumi such as finocchiona, sopressata, and chorizo require grinding, mixing, and stuffing equipment.
