Three years ago a few generous Seattleites helped me achieve the awesome aspiration of opening The Calf & Kid in Melrose Market. I knew Seattle needed a proper cheese shop, but never in my wildest dreams could I have anticipated the tremendous response we've gotten from cheese lovers far and wide. The shop has been greatly successful, and we've been recognized by local and national media continually since opening. Last year we were selected by Anthony Bourdain himself to be featured in an episode of The Layover - talk about a dream come true!
The Capitol Hill neighborhood has been very good to us, but it's time to spread the cheesey love, and I am beyond excited to bring you the next great step in all things fromage: A full service Cheese Bar located in the fun, funky Ballard neighborhood. The people of Ballard know and appreciate great food, so I can't think of a better pairing for my second cheese-centric adventure.
The concept is simple: we select the best cheeses from all around the world and from right here in the Pacific Northwest, then we pair them perfectly with beer, wine, and spirits. We showcase seasonal cheeses in fun and unique ways, from simple Parmesean crisps to breathtaking mac n cheese made exclusively with the best fresh pasta around. We will melt your heart with winter time Raceltte, then we'll cool your heels in summer with mouth-watering Burrata Caprese. How about a classic Frico to share with friends? You'll never look at fondue the same way once you've had it with rich Neal's Yard cheddars. Whatever your lactic craving, we promise to satisfy it and then some.
Many cities across the country proudly support their local cheese bars, and it's high time Seattle makes this a part of its rich culture.
BUT WE CAN'T DO IT WITHOUT YOU!
We've got what we need for a strong start, but we need additional funding to help pay for equipment and furniture, and construction on a new space. This is no small undertaking - we want to do this and do it right.
Without the option of traditional funding via a small business loan, we are so grateful that Kickstarter is available as viable avenue to raise the funds needed to open our doors. You can proudly say that you had a direct part in this awesome new business, what's better than that?

Risks and challenges
The Calf & Kid has been greatly successful, thanks in large part to the three years of research I did about everything retail before opening. However, my experience is largely in bars and restaurants, so I am very confident that the cheese bar will be every bit as successful, and much more. I've spent the past year visiting and talking with owners of other cheese bars and specialty restaurants around the country, and their experience and shared knowledge has greatly helped me write a solid and realistic business plan.
We are targeting early 2014 for an open date, which is not far off. The process of obtaining permits and completing build out is never a definite one, in fact you can almost count on pushing dates out farther than expected. However, we've already got as much in the works as we possibly can at this point.
