ABOUT BROOKLYN CIDER HOUSE
Two siblings and a friend quit their jobs to grow apples, make cider, and share their love of food, life, and drink. Their mission is to make really great cider with one simple ingredient: the apple. Help Brooklyn Cider House, Brooklyn's first farm cidery, with the final phase of the buildout of their 12,000 square foot cidery, restaurant, and bar.
Our cider rapture started in the Basque Country when Peter Yi, who was a wine buyer at the time, took a break from tasting wines to visit a sagardotegi. Delicious food, incredible ciders, and elated diners filled the cidery with pure magic. He was amazed by how well the natural cider paired with literally everything and how good he felt the next day. It was a thunderbolt moment and not long after his trip, Peter told his sister Susan, "We need to make a cider house in Brooklyn." He was dead serious and within weeks, Peter walked away from a business he built for 25 years and Susan quit teaching to study apples and hard cider.
That was the spring of 2014. We didn't know a bushel from a bin of apples. What we did know was that we wanted to make a delicious, all-natural cider.
Lindsey Storm joined the founding team in 2015 and since then we have revitalized a Hudson Valley orchard, where we built a cidery, tasting room, farm store, and pavilion that serves wood-fired pizza and burgers. We've also planted 40 acres of baby trees of heirloom hard cider varieties, which should be in production in 4-5 years.
Presently, we have turned our energy to the final phase of the project, which is to open the doors to a full-scale cidery, restaurant, tasting room, and bar in Bushwick, Brooklyn. We will offer a farm-to-table menu perfectly paired with our ciders and made with timeless homespun methods to highlight simple, fresh ingredients. We will also spearhead and house cider events, educational workshops, tastings, and harvest celebrations. We don’t just want to be a successful place of business. We hope to make Brooklyn Cider House a place of innovation, creativity, history, and community, and one day, to be a hallmark of Bushwick and Brooklyn, recognized for capturing the spirit of Brooklyn with something local, something crafted, something smart, and wildly natural.
We started the Brooklyn buildout at the same time we purchased Twin Star Orchards, but our Brooklyn location faced a slew of permitting issues that have really slowed the project down and sapped our budget. The delays have forced us to make some cuts to our original plans for the Brooklyn venue. The barnwood finishes and original art, however, are two things we don't want to sacrifice.
We are thrilled to be working with a master carpenter who is installing beautiful barnwood beams and finishes throughout. We are also hoping to commission two talented artists, Dede and Pixel Pancho to custom design and install murals inside and outside our venue.

Risks and challenges
We've spent the last three years learning the craft cider industry and building a strong following with our five styles of ciders. We've been very fortunate in that our cider sales have grown exponentially every year. But our Brooklyn location poses many risks and challenges. We're still dealing with construction and permitting challenges, and once we open, we will be dealing with the challenge of running a successful business and restaurant in NYC. That said, we have a dedicated and talented team that is committed to making this work. We make great ciders and have an original concept that is already attracting the interest of press.
