Caveman Cafeteria: Where The Hunters Gather! will put the first Paleo food cart on the 16th St Mall, in the heart of Downtown Denver.
The food cart will be an enclosed 5'x9' trailer with the ability to serve our full Hunter & Gatherer Menus 7 days per week, 6-10 hours per day (4 hours on Sundays only).
The trailer will be fully operational by April 1st at the latest (ambitious goal is March 1st).
The reason we are doing this is our current food truck is unreliable and it has been difficult to maintain a regular schedule. Denver needs Paleo options regularly, and the food stand will provide that.
We are raising $16,000 minimum (and hope to raise more!). Those funds will go toward:
Enclosed 5x9 concession trailer: $8-10k (For used, partially-outfitted food trailer. Several for sale in the Denver area for this price)
Additional restaurant equipment: $1-2k (depending on which used trailer we buy, we'll need to install a flat-top grill, two-burner stove, and possibly an exhaust hood, which we'll purchase used and install ourselves)
3k Watt Honda Generator: $2000 (unless we can find one used for less, but hard to come by in the winter)
1st Months' Rent on 16th St Mall: $550
1st Month's Food Cost: $2000
Food Costs for pledge rewards (conservative estimate): $1200 (at least, depending on how many pledges we get!)
Kickstarter & Amazon Payments Fees: Roughly $1300 (5% and 3-4% respectively)

Risks and challenges
We are uniquely poised to deal with risks and challenges associated with this project. We have already accomplished a high level of food service from our food truck, but we are limited by the mechanical problems. The food cart will have far fewer mechanical problems (no engine, fewer moving parts) and we will be able to focus on food service rather than being mechanics.Learn about accountability on Kickstarter
