A local green chef partners with an innovative school to create a healthy lunch program.
Who we are...
Thrive Café was started five years ago by Chef Wendy Armstrong as the first, and still only, Green Certified Restaurant in Savannah, GA. We work with over 20 local farms and use eco-friendly methods in our business practices. We excel in six categories designated by the Green Restaurant Association:
- water efficiency
- waste reduction and recycling
- sustainable food
- pollution reduction
Our daily customers are offered fresh, convenient and healthy dishes at reasonable prices and our vibrant local flavors give our catered events a distinctly unique flair.
The Thrive team loves to be involved with the community, environment, and education. We have participated in many events with local universities and environmental foundations, outdoor festivals, sport and health expos, and farmers markets. We even launched our own educational and interactive Sustainable Dinner Series in summer of 2012.
Now, an even more exciting opportunity has been presented! St. Andrew's School on Wilmington Island, has reached out to Thrive to ask for a healthier lunch program for their students. Fed up with the traditional institutional provider, this progressive private school would like to work with, not a corporation but a dedicated, local small business that matched perfectly with its goals: healthy, local, eco-friendly, real.
St. Andrew's School:
This independent school traces its beginnings in Savannah back to 1947, and its namesake reflects its Scottish heritage. They currently have 425 students and growing. This is greatly due to St Andrew's entrepreneurial focus, and, the contribution the International Baccalaureate program has had on their graduates being admitted to the top colleges in the nation.
“This is an amazing opportunity for our families and truly a creative approach to feeding hundreds of students on a daily basis,” said Mark Toth, headmaster. “St. Andrew’s continues to take an innovative approach in and out of the classroom. This is another example of how we are reaching out to the community in creative and collaborative ways.”
It is a challenge to fit a healthier lunch program into a tiny school lunch budget. Being a private school, St. Andrew's is not eligible for government subsidies (which are unhealthy anyway!) but Chef Wendy and the Thrive team are eager and willing to step up. There are still a few pieces to fit into place however. The last service company took with them the vital equipment needed to provide the children with their lunches, so replacement items along with specialized equipment necessary to provide "from scratch" cooking are needed.
What will we use the funds for?
We are setting a goal to purchase a cash register system, a hot holding unit, a mixer, a food processor, steamer, and smallwares (pots, pans, etc), as well as to cover a few other startup costs. St. Andrew's and Thrive are contributing what they can, of course, and will also be looking for deals and auctions. But we are also reaching out to like-minded friends (you!) to help get the ball rolling.
Thrive plans on serving up healthier lunches, such a hot topic now! Our children are the first generation predicted to have a shorter lifespan than our own. We can change that right now, and show others how to change, too.
We would like to revitalize the school garden and integrate it into the kids’ lessons. We want to involve the kids in nutrition, cooking techniques, and encourage them to try new things, all while still making the food kid-friendly. Lunch items can be paired up with other lesson plans. Bring in our local farmers (Farm to School!). And teach green practices. We can show the next generation how it is all interconnected!
