Two awesome concepts sharing the same space by the same people.
We are building Bunny, the micro bakery and WunderPOP because we are in love with the food we make. We love thinking about it, experimenting, analyzing why certain concepts, techniques, and flavors work. We want to have an environment where people can access our food everyday and join in that conversation.
Bunny, the micro bakery will take some of Chef Regan's most beloved creations and give them every day accessibility. We will take a few key items and make them in the best possible way we can. We will have breads, toasts, pierogi, doughnuts, burgers, house-made cereals, jams, butters, sodas, coffee, and classic pastries.
Wunder POP is our petite ever-changing restaurant within our micro bakery that will seat up to 12 guests at a time. Wunder POP will curate pop-ups in the off hours to explore Chicago's diverse culinary culture and progressive trends. The space will allow fresh and veteran chefs the opportunity to exhibit their talents and offers a playground to test out new ideas.
Bunny, the micro bakery and Wunder POP are going to be two really unique, fun, and interesting food places in one teeny tiny space.
We are running this campaign because we feel it would be a fun way to support the onset of the project by those who love our food and believe in our ideas. The money would help pay for some of our initial start-up costs.
Risks and challenges
There are hundreds of risks when opening a food business. To date, our collaborators Iliana Regan and Philip Tadros have several successful businesses behind them. They continue to push forward and stay creative. Their combined talent, brain power, and relaxed demeanor will allow them to find solutions rather than sit in problems.
Right now we are on track and have no foreseeable set-backs. The extra finances will help us continue to push our project at a steady pace.
