Over the past two years, Marcoot Jersey Creamery has established itself as one of the Saint Louis area's finest cheese makers. Sisters Amy and Beth Marcoot have become well-known fixtures of several local farmers' markets and have worked tirelessly to get their cheese into local grocery stores.
While the quality of their current cheese is already excellent, they are unable to make certain varieties of cheese, such as traditional cheddars and colby, because they lack a commercial cheese press.
In this kickstarter campaign we hope to raise the funds to help Marcoot Jersey Creamery get a cheese press, improving the quality and availability of local cheese in Saint Louis.
An explanation of the farm and the project from Amy Marcoot:
A major component to our sustainability is making great products. That is our goal everyday. There are a few pieces of equipment we need to buy for the quality of our products to continue improving. A cheese press is the major piece of equipment we need. We are very excited about making a great cheddar and possibly even a colby cheese. We cannot do this well without a cheese press. Not only will we be able to add new cheeses, some of the cheeses we are currently making will improve with a cheese press.
Fair Shares Funds is an ongoing project of Fair Shares CCSA, working to improve the infrastructure, quality and distribution of food grown and produced in the Saint Louis area.
By raising funds for local agricultural infrastructure, we help area farmers help themselves and our community.
