Amazake is a sweet fermented drink made from rice "koji" (rice malt), which has been in Japan since ancient times.
Isehikari Amazake is a twice-concentrated paste-like amazake, for which the "koji" of organic and unpolished Isehikari rice is used.

Each of the members of Unity House Project have been doing the work and activities of the natural business to organic food, clothing and shelter including natural foods, holding the mission of creation of «Unity House», the house is "Everyone's house where our heart, body and spirit are unified and harmonized".
We came to think "Can we create products that will help people to be unified and harmonized in the future?" , and we had arrived at the theme of "creating the koji food by using the sacred rice called Isehikari".
After that, we received a lot of support through Japan's first cloudfunding, and then, thanks to the support with love from the people all over Japan, "Isehikari Amazake" (the sweet, non-alcoholic fermented drink made from unpolished Isehikari rice, certified by Organic JAS) was born !
Our product, "Isehikari Amazake" is Japan's greatest "koji" food that is useful for mental and physical health and harmony, which is created from Isehikari rice with the excellent genetic characteristics found in the sacred rice field of Ise Jingu (Shrine) and the only one kind of koji in Japan naturally living in the home facility for fermentation.
And this time, through wonderful Kickstarter, we, all of our members are so grateful to able to announce【Isehikari Amazake ☆ World Project】of Unity House Project !
Isehikari is rice found in Ise Jingu, the oldest shrine in Japan, which is considered to have the highest shrine status.
Ise Jingu enshrines the most supreme god in Japan, "Amaterasu Omikami", and has been keenly believed by people since ancient times. During the summit meeting of the 7 developed countries held in 2016 near Ise Jingu, the leaders of the countries visited there, and from their impression that they felt, it became known worldwide as a Japanese energy spot.
In Ise Jingu, there is a paddy field that self-suits rice to serve "Amaterasu Omikami" every day and Isehikari was discovered by chance there.
Due to the big typhoon hit in 1988, only two stalksof rice were upright although all the stalks in the field fell over. Those two were Isehikari.
New varieties of rice are researched under the control of the government. However, as this Isehikari is the rice that had suddenly grown in a paddy field of Ise Jingu, the government has not been concerned in this variety of rice, and the hearty and earnest farmers have been carrying out the spontaneous cultivation and its distribution.
Therefore, this variety of rice is not common even now, but this rice is suitable for saying that it is a gift from "Amaterasu Omikami" that is indeed the symbol of love, light and rich harvest.
Isehikari has a thicker stalk than those of the conventional varieties, does not fall down easily, has high yield, and has disease resistance. Therefore, it is drawing attention as a variety suitable for organic cultivation.
As Isehikari is hard type rice different from the common Japanese rice variety such as Koshihikari and other varieties, the texture is refreshing. It is a precious rice because it has a characteristic that sweetness is strong and it has a characteristic of lightness that prevents it from lying heavy in the gastrointestinal tract.
Strangely enough, Isehikari also has the property of causing mutations naturally with high probability even if it is cultivated normally, and it is said that it probably includes [transposon] (a moving gene).
Until now, transposons have been found only in the fossilized rice, but if Isehikari rice includes a transposon, it can be said that "Isehikari rice is evolving as it is alive."
We have been fascinated by the organic characteristics of Isehikari rice which has the sacred energy of high vibration, and moreover which makes it possible to cultivate without requiring agrichemicals. We would like to continue to explore the great possibilities of this rice in the future.

The production of organic rice by Mr. Koichi Tamura, the producer of organic Isehikari, which is the raw material for "Isehikari Amazake", began reclaiming the mountains ranging to Kasugayama mountains primitive forest which is located in Nara City and is registered in the World Heritage Site in order to make the ideal paddy field.
Since he has much concern with the water of his paddy field that he himself calls "the scared place", he uses the pure underground water pulled, only for his paddy field, from Kasugayama mountains system in order to prevent agrichemicals, etc. from inflowing in his paddy field from other places.
In addition, when setting out young rice plants, he does his own unique way of planting. He puts his blood into growing the roots healthily and strongly. He strives day and night to make his original organic rice through his exploration over a long period of time.
The bases for Mr. Tamura's rice production are "No agrichemicals all the way from the stage of raising seedling", "No herbicide at all" and "Homemade complete mature compost based on rice bran, rice husk, plant residue, etc.".
Mr. Tamura’s aim of making rice is to create "really healthy and vigorous rice". He is working toward organic cultivation with full of love and passion for rice and is aiming for further height.

Amazake is a very excellent fermented food produced with "koji" that is said to be "the national fungus" in Japan. Although flavorings such as miso and soy sauce are famous overseas as fermented foods produced with "koji", amazake has been loved and eaten as a healthy food with excellent nutritional value from ancient times.
The method of production of Japanese miso and soy sauce with the koji which exist naturally in those home facilities for fermentation used to be a technology that was cultivated as it was common for a long time, but now koji is usually purchased from seed koji sellers for stable production, and this traditional technology is lost.
Marukawa Miso has been in charge of production of Isehikari Amazake according to our request, and this company was established 100 years ago. From their desire to naturally make old-fashioned miso rich in personality as usual, they have been carrying out production of miso with "koji naturally living in the home facility for fermentation", which are seed koji being gathered from the inside of their facilities for miso fermentation.
Nowadays, Marukawa Miso is the only company that keeps this traditional technology in Japan. Four kinds of koji fungus living permanently in their facilities for miso fermentation bring very good odors when being made into koji and the energy of fermentation is different.
Isehikari Amazake is fermented and produced carefully with this precious koji being gathered from their own home facility for fermentation, and therefore this is very rare "koji" food made from organic and unpolished Isehikari rice, which is sweet with very deep taste.
As the diverse substances important for maintaining the body are included with perfect combination in amazake, it is called "drinking drip infusion". The substances included in amazake are vitamin B1, vitamin B2, vitamin B6, folic acid, dietary fiber, silica, cysteine, glucose and abundant essential amino acids such as arginine.
While "koji" is doing fermentation action, it produces a large amount of enzyme. Eating amazake results in supplementing abundant enzymes into the body and the metabolism in the body becomes active. As you can understand by reading the texts so far, it is not easy to produce "Isehikari Amazake" with Japan's best quality, made from the rare organic Isehikari rice as raw material. However, this product is what we have succeeded in producing through the actual process. Therefore, we believe that the environment for shipping worldwide is in place.
However, it is a fact that there will be risks such as difficulty to deliver the product as promised time depending on factors such as the number of orders becoming very large since the organic Isekari rice as raw material is a product of nature and the production of "Isehikari Amazake" is also based on a time-consuming production method.
