As a chocolatier, I am often asked about how truffles are made. I have demonstrated techniques and methods for making truffles in many classes on chocolates. In this book, I take the fear out of making real chocolate truffles. There are sections on selecting chocolate, ganache, rolled and cast chocolates. I also include several of my favorite resources for chocolates and supplies.
