Please, the restaurant, will be a natural progression from our widely popular pop-up dinners that have run regularly for the past 4 years. Please will continue to strive to be an honest, delicious, value driven restaurant that continues to focus on creativity, quality and sourcing locally from the Ohio River Valley, Tri-State and beyond.
Opening a permanent location of Please isn't just the next step for us, but it's also the culmination of a long dream and a dedication to never give up on a rather major set of obstacles. Many of which don't have to do with cooking or opening a restaurant. It would be our honor to have you a part of making our dream come true.
My passion for cooking began over 10 years ago. Diagnosed early in life with Crohn's Disease, it didn't really majorly affect me until my college years. Suddenly doctor's were telling me to go on a strict gluten free, dairy free, sugar free, alcohol free diet for 6 months to help determine how my case of Crohn's was affected. In the early oughts, this was not quite as easy as it is today, restaurants weren't making this type of food, and the local big chain grocers surely didn't have a shelf, let alone an aisle dedicated to these restrictions.
So I learned to cook from scratch. Things like salad dressings and mac'n'cheese were things that came in bottles and boxes, or from my mom's kitchen. Never something that was made by hand. And with that my hunger for a professional kitchen began. Eventually I had surgery and got back on my feet, and it kicked off a whirlwind of cooking and learning in 2005. I've cooked around the USA as well as through Europe pushing myself and my craft working under such great chefs as Chef Kevin Sousa and Chef John Shields.
The learning I've done under these and other chefs around the world, and my drive to push myself to learn and grow here in Cincinnati through our pop-up have culminated with me being ready to open my own restaurant.

We need your help. We have always done things on our own, and this is no different. We don't have partnerships with large investors or development groups. We have to do this on our own. We are excited that a large portion of our funding needs have been committed to already by a group of small investors. But there is a small gap that needs filled. In other words, we need you to help us reach our dream!

Please started 4 years ago with simple vision to push myself to grow learn and be creative with food, and now we've grown that into a popular regularly running pop-up that is ready to grow into the restaurant of our dreams. We hope to have a clean, modern yet cozy space in Cincinnati, that will serve 30-50 guests a night and target opening to late 2015/early 2016.
Having worked in restaurants, been a part of opening nights and shared many a beers with chef friends opening their own restaurants we are well aware of the risks and problems that can arise. The plumbing is old, permits get delayed, and the gas lines need re-run. These are all things restaurants go through. But in chasing this dream, we've been handed roadblocks greater than any of these, and have had the drive, passion, vision and hard work to get through them, and this time is no different.
Even with as much as we're willing to push for this, the reality is that without your help, our dream can't come true.
