Sweet Magma currently sells at select stores and farmer's markets and is the perfect balance of heat and flavor. Part of what makes Sweet Magma so good is the punch of ginger inspired by Thai cuisine yet much more versatile. Sweet Obsidian is a brand new Thai chili based hot sauce, first released through this Kickstarter project. Dyed black with squid ink and sweetened with beets and honey, it is truly unique and delicious!
You can put these delicious hot sauces on almost anything. Some of my favorites are eggs, Chipotle, any Asian dish, and chicken wings.
Currently these hot sauces need to be kept refrigerated by stores, so the next step is get my hot sauces certified as shelf-stable, which means they won't need to be refrigerated. Once they are shelf stable, my hope is that more stores will start carrying these unique and delicious hot sauces. I need to take an acidified foods course and send my products to a lab for testing in order to create shelf-stable products.
Having a shelf stable product basically means having a low enough pH so bacteria doesn't grow and bottling the hot sauce at hot enough temperature. I have already demonstrated both these requirements, and now I need the funds to get it officially approved.
Once the project is funded the first step will be registering for an online Acidified Food Safety course ($400). I'll send samples of my hot sauces to the University of Kentucky for testing ($160). Next I'll get new labels printed that say "Refrigerate After Opening" instead of "Keep Refrigerated" ($800). Lastly I'll need to register with the FDA in order to send my products across state lines. Once these tasks are complete I'll be good to start producing and shipping rewards to people.
Risks and challenges
The main risk is hitting a snag somewhere in the process. Perhaps the product testing doesn't go as smoothly as planned or it takes me longer than anticipated to complete the acidified foods course.
With these potential hiccups, the main challenge will be delivering peoples rewards on time. I would love to be able to deliver by Christmas but that is by no means a guarantee.Learn about accountability on Kickstarter
