For the past year, a team of Tuck and Dartmouth students have worked extremely hard to launch Dartmouth’s first-ever food truck, The BOX! All along our ultimate goal has been to leave Dartmouth in a better place than we found it. We hope to do this by:
- Delighting our customers with delicious food, warm service, and a fun atmosphere
- Inspiring our team of undergraduates with real-world learning experiences and mentorship from Tuck students
- Improving our community with educational programs and low-impact operations
Thanks to our hard work, we’ve been able to raise a significant portion of the money needed to get this project up and running. BUT we still need your help to raise another $15,000 to reach our goal. A little bit about us.
The BOX was founded by Eric Winn and Mike Parshley, both Class of 2014 students at the Tuck School of Business. Originally from Rhode Island, Eric graduated from Dartmouth in 2004 and spent nine years at C&S Wholesale Grocers before returning to Tuck. Mike grew up in Massachusetts, attended Colgate University, and worked at Fidelity before venturing north to Hanover. Both share a passion for Dartmouth, Hanover, and delicious, inspiring food.
Over the last year, Mike and Eric have recruited a team of enthusiastic Tuck and Dartmouth students. Today, The BOX’s team stands at eight Tuck students and over 15 undergraduates (and growing).
More importantly, Eric and Mike were lucky enough to cross paths with Tyler Harvey, now The BOX’s Executive Chef. Tyler grew up in Hanover, graduated from Georgetown in 2009, and then spent three years as a line cook at the award-winning Birch and Barley Restaurant in Washington, DC. Before returning to Hanover this past summer, Tyler ran her own private chef business and was the Executive Chef at Broadacres Ranch in Creede, CO.
The Food: Mediterranean Inspired, Locally Sourced.
The BOX’s menu is inspired by the delicious cuisine of the Mediterranean. It will offer fresh, healthy, and mouthwatering food currently not available on Dartmouth’s campus. Just as importantly, the menu allows Tyler to leverage all the amazing ingredients available from farms in the Upper Valley. As a result, we will be able to rotate our menu seasonally to take advantage of all the beautiful produce available throughout the year.
The Business: Experiential Learning is our Cornerstone.
At The BOX, our core philosophy is to provide real-world management experience for Dartmouth undergraduates. Each year, a team of Tuck students will manage all aspects of the business, from finance and administration to operations and marketing. They will work closely with The BOX’s undergraduate team, who will not only staff the truck but also have the opportunity to help run the business.
We plan to have a rotational program where undergraduates will work alongside the Tuck management team and gain valuable experience in all aspects of running a successful business. Furthermore, we will have a formal mentoring program so the undergraduates will get the most out of the experience. We are confident this management program will help prepare The BOX’s undergraduate team to succeed after they leave Hanover.
Where you come in.
Over the past few months, The BOX team has worked diligently to raise the money to start this business. Luckily enough, with the support of a number of generous backers, we’ve raised enough money to purchase the truck, begin ordering equipment, and start covering other operating costs.
Here’s a quick overview of what we need to get this business off the ground:
- A Truck: $70,000
- Employee Salaries & Training: $25,000
- Equipment & Food Supplies: $20,000
- Insurance: $10,000
- Legal Fees, Permits, and Marketing Costs: $10,000
The $15,000 we hope to raise with your help will mainly go to training employees, purchasing equipment for our prep kitchen, and paying legal and permitting fees. Risks and challenges
We recognize there are risks associated with any new food business, especially one operating out of a truck in Northern New Hampshire. Despite these challenges, we’ve done a great deal of work to ensure our success. We've completed extensive market research, including a 600+ respondent survey, 11 focus group meetings, discussions with several restaurant owners in the Hanover area, and several successful taste testing events. We've developed strong relationships with Dartmouth and Hanover officials, including members of our official advisory committee. We've hired an accomplished, experienced Executive Chef, who has created a versatile menu that allows us to cook seasonally. Finally, we've recruited a (constantly growing) team of passionate and intelligent Tuck and Dartmouth students.
Through all this work, we are confident we can run a profitable food truck business that benefits our customers, our employees, and the community as a whole. Since our beginning, it has been our dream to help change the culinary and educational fabric of Dartmouth.
