Food brings people together, but it is often a source of stress for people. Busy families don’t have time to shop for, or prepare, healthy food. Seniors and busy professionals also struggle to get good food onto their tables each day. Our jam-packed to-do lists are overflowing and preparing food is often last on the list. At Hello Dinner, we want to make people’s lives easier! Good food nourishes us, but people are busy and as a result must rely on convenience foods, take-out, pizza delivery or eating out at restaurants. Hello Dinner was created to help people lead healthier lives and bring families together around the dinner table.
How Hello Dinner Came to Be
We are Chef Diane Hodges and Emily Barker and we worked together at My Fit Foods as Nutritional Coaches and supported hundreds of clients in achieving significant weight loss goals and making lifestyle changes. When it was announced in May that all four My Fit Foods’ Boise locations would close, our clients were beyond devastated! They were shocked, angry and disappointed that the healthy meals that they had come to rely on, were going away for good. With the close of business, we partnered together to bring nutritional coaching services to eight local Anytime Fitness locations with our health coaching practice, Nutrition at Anytime. But what we soon discovered, was that what our clients really wanted was for us to cook for them! Word of mouth spread quickly, and soon Chef Diane was cooking for 15 private clients out of her kitchen. We decided to put together a plan to expand Hello Dinner in order to take on more volume. We came together due to a similar vision of helping make healthy food tasty, convenient and affordable for busy professionals, families and seniors.
How Does Hello Dinner Work?
It’s pretty simple: You choose the meals you want in a given week, order by Sunday at noon, and the meals show up at your doorstep the next week. There is no minimum order size or no long term commitment. Delivery is free for orders over $75. With the new retail location, customers will have the option of picking up their food at their convenience. Hello Dinner will also offer daily specials on meals for those who haven’t pre-ordered ahead of time to purchase on-site, as well as a few frozen options.
The pricing varies by the number of portions ordered with discounts on orders placed for multiple weeks. The portion sizes are generous with over half your serving filled with vegetables, or as many as Chef Diane can cram into the container!
Our meals are nutrient dense with a generous portion of protein. Everything on the menu is cooked from scratch and gluten-free. There are no preservatives, artificial flavors or sweeteners added. The meats are locally sourced, hormone and antibiotic-free, and all seafood is wild caught. We intend to partner with local farms and use local and organic ingredients whenever possible. We offer dairy-free, paleo and vegan options and are able to customize for those with food allergies. We do not use peanuts in our kitchen and only very limited soy with the exception of gluten-free tamari and non-GMO tofu for vegetarians.
With Hello Dinner, people can enjoy flavorful and nourishing food in the comfort of their own home, without the added calories, excess sodium and sugar, inflammatory and unhealthy fats, and GMO ingredients found in typical restaurant meals. Not only is it convenient to order Hello Dinner meals, it is healthy and delicious, too!
GREEN CURRY CHICKEN- Spicy green curry coconut sauce with chicken, lots of veggies and forbidden black rice
TURKEY MEATLOAF –Moist turkey meatloaf with cinnamon sweet potato mash and roasted corn succotash. Served with clean ketchup.
QUINOA AND 5 SPICE STIR FRY- Many veggies and quinoa topped with pork loin seasoned with Chinese 5 Spice. Served with Sweet and Spicy Tamari.
LETTUCE WRAPS – Your choice of chicken, shrimp or tofu served with romaine lettuce wraps, black rice and spicy tamari mustard.
TURKEY MEATBALLS AND MEGA MARINARA- Meatballs served with mega marinara, gluten-free pasta and roasted seasonal veggies.
CHIPOTLE CHICKEN OR SHREDDED PORK LOIN TACOS- Your choice – served with black beans and Chef Diane’s world famous salsa.
QUINOA BROWN RICE RISOTTO WITH SALMON- Creamy risotto served with seasonal sautéed veggies and wild salmon.
TURKEY BURGERS AND QUINOA SALAD- Homemade turkey burgers pan seared with Dijon and served with clean BBQ and quinoa salad.
CLEAN PULLED PORK- Shredded pork loin with clean BBQ sauce served with roasted red potatoes and veggies.
BALSAMIC CHICKEN AND PESTO- Chicken sautéed in balsamic vinegar and served with roasted veggies and pesto.
CHICKEN ENCHILADA BAKE- Seasoned chicken, veggies and clean red chili sauce layered with a touch of natural cheddar and cashew cream and served with Chef Diane’s world famous salsa.
WARM LENTIL SALAD – Lentils, caramelized shallots and roasted beets served over a bed of fresh spinach with white balsamic and tarragon viniagrette.

Meet the Team
As a Certified Health Coach and Chef, Diane is trained to address special needs, including food allergies, likes and dislikes, and dietary restrictions. She believes strongly that eating well is the foundation for living a happy, healthy life.She began her career as a chef in an inpatient drug and alcohol treatment program, healing the patients with healthy food and teaching them how good nutrition could support them on their road to recovery. Being a part of helping people change their lives for the better really gave her the passion to work hard to develop recipes and cooking techniques to make healthy food taste delicious as well as be good for your body. Diane’s philosophy on nutrition is to “learn from every meal you eat by enjoying every bite.”
As a Certified Health and Nutrition Coach and gluten-free foodie, Emily’s mission is to help individuals shift their focus from dieting to creating healthy habits which last. As the mother of a son with a rare growth disorder who was fed via a tube for eight years and two other children, she is passionate about getting families back into healthy eating routines, regardless of their busy schedules. Prior to joining My Fit Foods, Emily was a family health coach in her private practice Eat to Thrive Health Counseling (www.eattothrive.com). Working with parents and children to improve their health and build vibrant and thriving families is what inspires her. She believes strongly in the power of food as medicine and has seen the impact of good nutrition in her own health, as well as that of her family and clients. She has a background in Marketing and Advertising and will act as the Marketing Director, Health Coach and part-time Delivery Driver.
Where is Hello Dinner located?
We found the perfect kitchen and retail space for Hello Dinner on Fairview Rd. & Cloverdale in the Town and Country Marketplace. This center includes the Produce Barn, Choice Cuts Meat Market, Great Harvest Bakery and Jake’s Gluten Free Market. The health conscious consumer we appeal to likes to support local businesses such as these and it is an ideal match for us and we couldn’t be happier! The space has a commercial kitchen, prep space, office and an area we will set up as a classroom/eat-in area. It also has outdoor space for us to grow some produce in pots and set up some tables for outdoor dining.
Our goal is to turn our space into a wellness destination for our local community. We intend to offer healthy cooking, nutrition and wellness, and kids’ classes taught by Chef Diane, Emily and other guest chefs and wellness professionals. Emily will also offer health coaching services to clients who want to make healthy lifestyle changes.

We have already signed a lease for the space at 12646 W. Fairview and we opened on December 4th. We are investing our own money for start-up costs, but need your help. Do you offer nutritional facts?
It is our goal to provide these on our packaging, but at this time it will be available by request only as we get the business up and running.
How long do the meals last?
They last for 5 days in the fridge. If you are interested in freezing them, Chef Diane can give you recommendations on which meals would be appropriate for this.
How do I heat the meals up?
There are warming instructions on the package. You may warm in the microwave, in the oven or in a skillet depending on the meal.
Is it a certified gluten-free kitchen?
No, it is not, however, we do our best to make sure that there is no gluten present in the kitchen. If you are extremely sensitive or Celiac, we cannot guarantee there will be no cross contamination.
Do you only offer dinner?
No, we actually have breakfast on the menu as well as some special gluten-free treats, condiments like Chef Diane's Clean Ketchup and a few snacks. Dinners can be eaten interchangeably as lunch and often our clients use their leftovers for this purpose. We also offer from scratch soups. What type of oils do you cook with?
We use coconut oil, avocado oil and olive oil exclusively in our meals. No GMO-canola, corn or soybean oil in our kitchen!
Do I have to sign a contract?
No, there is no minimum order size. You can place an order for one meal or several weeks worth of meals.
How does delivery work?
We deliver to your home or office on Tuesdays, Wednesdays or Thursdays, based on which area of town you live in. You can leave a cooler on your doorstep with ice packs, or if you'd like to give us your garage code we are happy to place the meals in your fridge. Currently we deliver between 2-5pm. We anticipate adding delivery hours and days once we get into our new space and offering pick up!

The Risks and Challenges
We are anticipating a high volume right out of the gate and this will be challenging as we get our systems in place. We don’t want to hire anyone right away, so the cooking, packaging and delivery will all be handled by Diane and Emily, not to mention washing all those dishes! Time will be our biggest challenge.
As we grow and are able to hire staff, it will allow us to get out into the community at health and wellness events and teach classes. We would love to partner with companies with corporate wellness programs, as well as set up an affiliate program with local gyms and develop programs with schools to provide larger scale deliveries. The potential is endless!
Fortunately, we both worked with a healthy prepared meal business for 14 months and have the knowledge of what works well and what doesn’t in this industry. We understand what our clients want and can make it happen our way!
