So now that you’re more familiar with the Anacapri project I wanted to give you some nuts and bolts of our current operation. As of now we have been working on turning the initial idea in to an actual business. We have completed the FBN from the county offices and applied for and received our business license from the City of Riverside. We have also applied for our rectifiers ABC license and completed all of the pre-check information to allow us to apply for the license. We are also getting ready to switch from 2 liter fermentation tanks to 20 liter tanks. We have been running with 12 of the smaller tanks for production but we need to increase output. The smaller tanks will continue to be utilized for new flavor testing and some small batch special edition flavors in the future.

We are ready to switch from the Mason Jars to a permanent glass and plastic bottle that will allow us to sell our liqueurs in 8oz, 16oz, 24oz and 32oz. We will need to place the order for the bottles and the labels for the different bottle sizes and flavors for each bottle size. We are also in the works of setting up a climate controlled commercial unit to store our fermentation tanks and inventory.

Once our ABC license is issued we can move through the production growth stages in to the sales & marketing stage which is my best quality. We have already built up over 100 people who have sampled our products and love it. So we’ll build on that foundation and spread the word through a grass roots campaign. We’ll also use our social media platforms to build awareness of our products and keep customers informed. We have spoken to several bars, restaurants and an alcohol distributor for the western U.S. who are interested in selling our products.

Lastly we have big plans for a product launch party somewhere in the inland empire. We have spoken to a major radio station and shared our products with them on several occasions. They are on board to say the least! We also have an awesome local cover band that will play the event a no charge to help us grow the brand. At the launch party will be giving out 1oz samples of all of our flavors and have plenty of bottles on hand for purchase.

Risks and challenges

In terms of risks and challenges, like all companies we have a couple. With that said we have already overcome so much since we are through all of the product development stages. We have already completed plenty of product taste testing with over a hundred people which helped in getting consumer input to finalize our recipes. That was probably the biggest hurdle was making sure our products not only unique but desirable to consumers.

I think our biggest hurdle we will have to overcome in the next couple of months is switching to the 20 liter tanks. We are very skilled at handling all of the ingredients that are necessary for each batch made in the 2 liter tanks. Jumping up to the 20 liter tanks does present some challenges. We’ll have to source more ingredients, almost 10 times our standard purchases. As far as the recipe is concerned, the ratios we’ve used in the past to go from sample to production have proven to work great.

Another challenge we will face is getting the general public to embrace our products, so far our product taste testers have enjoyed the products in our line. But when we first approached some of them they weren’t interested in trying something new. Most of the testers haven’t even heard of Limoncello, so through education and sampling we won them over. So I believe through creative marketing strategies, product taste testing and education we can bring this drink sensation to life.

Lastly, we consume quite a few lemons making our number one drink, our Limoncello. We’re going to go through a lot more in the very near future. Since we really only use the zest from the lemons were left with everything else. A thought we had was to make a brand of Lemonade and donate a portion of the profits to the March of Dimes Charities. This is a challenge that we’ll love to embrace in the very near future. We’ve been working hard to perfect a lemonade recipe that the public will love too!
