The world of Kansas City Barbecue Society (KCBS) competition is unlike anything we expected or had ever experienced in the past. We had dabbled in BBQ for three years before building our own team and hitting the competitive BBQ circuit this past summer. Our original goal of three competitions in 2013 was turned upside down. We found ourselves clearing our schedules to fit in more events, making field trips to exotic spice stores and classes, and meeting some of the friendliest people on the face of the earth. We upgraded equipment, bought new smokers, and zeroed in on a top-notch cook process.
Now, we are looking ahead to the 2014 season, both in the competition arena and outside of it. Having blasted by our original goals and exceeding our expectations, we are looking to achieve something more substantial next year -- we are cooking up a plan to win some Grand Championship events, to enter the Sam's Club tournament, and to extend our competition area outside of the Virginia area to Delaware, West Virginia, Maryland, North Carolina, Georgia, New Jersey . . . and hopefully Tennessee, Arkansas, and Missouri. We also want to expand our local cooking operations in order to cater parties and events. To do this, we need to simplify our travel and cook more efficiently. With this, we will be able to build our dream of a BBQ business.
During the past season, we have packed and unpacked our equipment into rented U-Haul trailers. We have slept in hotels, in chairs at the cook site, or huddled in vehicles. We have prepped our food in the open air on folding tables, relying on a steady supply of ice in coolers to keep our ingredients at safe temperatures. To borrow a line from the great Lowell George, our gear has been "kicked by the wind and robbed by the sleet" this season.
This Kickstarter campaign will ease the burden on Old Virginia Smoke, and will grant us with the ability to cook great food in a more efficient manner.
This will allow us to concentrate our focus on crafting and serving award-winning barbecued pork, beef, and chicken, while giving us the opportunity to expand our enterprise into catering and special events.
Risks and challenges
This campaign represents the first step in helping Old Virginia Smoke dramatically up our game. But we know that the tools are just part of the strategy. We have already plotted out an "off-season" schedule of practice cooks, barbecue crawls, taste tests, and scouting trips to help us prepare for the 2014 season. We are 115% committed to cooking great food, meeting amazing people from around the country, and making people happy with our passion.
