We have been hard at work for almost a year creating recipes for unique hand crafted Cocktail Bitters and we are ready to take our project to the next level!
These will not be your average Cocktail Bitters, we have put together some great flavor profiles which we feel have yet to be represented in the cocktail world. All of our Bitters will be hand crafted in San Diego and designed to enhance the flavor profiles of Classic and Modern Cocktails alike. Our three main flavors will be a Aromatic with a hint of citrus, Cherry Apple, and an old fashioned style Sarsaparilla.
WHAT DO WE NEED?
In order to fine tune our recipes and create larger batches we will need large volumes of Base Spirit, Raw Ingredients, Barrels to infuse the Bitters, Charred Oak Finishing Casks, Bottles, and Labels. Once we have all the materials and equipment we can begin to produce our RX Bitters on a larger scale which will enable us to fully explore this project.

In Addition To Our Initial Three Flavors We Want to Expand What's Possible In Cocktails By Introducing Smoked Bitters!
Smoke is a very powerful and pleasant flavor sensation in foods such as BBQ, charcuterie, and other smoked meats. It is also making it's way into cocktails through unique spirits such as Islay Scotch Whisky and Mezcal. We want to create a naturally smoked line of bitters that combine the flavors of fruit with the smokiness of different types of wood. We will need to purchase a large smoker, different types of wood for experimentation and of course the raw ingredients and base alcohol.
Our Final Stretch Goal Is To Create Barrel Aged Bitters To Further Extend The Possibilities That Bitters Can Bring To Your Palate
There's no denying that age improves all and bitters are no exception! We want to experiment and create bitters designed to be barrel aged. Much like spirits that improve and mature in Oak barrels we want to design a line of both wine and whiskey barrel aged bitters. The aging process helps to accentuate certain flavors and round out the overall flavor profile. We plan on aging these bitters in different used wine and whiskey barrels which will contribute additional flavors left over from the original contents. We will need to purchase multiple used 3 and 5 gallon whiskey and wine barrels in order to achieve the desired flavors.
With over 26 years of Bartending experience in some of the nations top bar programs we are in the perfect position to make a thoughtful addition to the cocktail world through our RX Bitters.
Risks and challenges
While any project like ours has it's challenges we have been hard at work for almost a year on ours and we have already faced many of the hurdles along the way. However, some challenges certainly lie ahead. Our main obstacles will be working with batches of spirits and raw ingredients on a larger scale and fine tuning the recipes.
There will be a bit of trial and error as we experiment with what flavors work in cocktails and which ones don't. This of course will take some time and patience but we're so excited to start this project that we're looking forward to it!Learn about accountability on Kickstarter
