You've tasted them in your favorite cocktails, you've seen them behind the bar, but have you ever considered making your own? Of course you have; you just needed help getting started!
Who is Tonguespank Spice Company?
We are a small group of Chicago foodies who are dedicated to saving the world from boring food. We love finding and experimenting with exciting foods and sharing the fruits of our labor with our friends. We launched in 2013 with our first product –– liquor-infused spice blends –– and we've been spanking tongues ever since.
What is this Awesome Thing You Are Doing?
At Tonguespank Spice Co. we are specialists in, well, spices. We like to think we know a thing or two about liquor as well, but for this project we turned to the real experts: Chicago's own CH Distillery. With their help, we've come up with three kits and five fantastic infusion blends to launch you into the art of liquor infusion.
Unlike many infusions that can take days or weeks, Tonguespank infusions are intended for more immediate use. Each one can be made in one hour or less, using any liquor you want. In fact, if you use a nitrogen infuser (see our SCIENTIST kit), you can make them in minutes! And while you'll receive more than enough spices to get you started, you'll also get high-quality hardware for years of experimentation.
What's an Infused Liquor?
In theory, infused liquors are simple: they are simply flavored alcoholic spirits typically created by maceration, or breaking up and soaking various food products in alcohol. In practice, however, this means there is an infinite variety of combinations to explore.
Infusions are often used in cocktails, although they may also be enjoyed by themselves. As well as defining thousands of cocktails around the world, they are the most effective method of experimentation when it comes to getting the flavors from your imagination into the glass.
Let's get to the good stuff! Here are the five infusion blends that Tonguespank and CH Distillery have created to get you started with your new infusion kit. Just add your preferred liquor, and you're ready to go.
Smoke & Citrus Bourbon
If you're a fan of the Old Fashioned (and who isn't?), you're going to love this one. Close your eyes and and imagine the aroma of orange zest. Got it? Now add smoke and black tea, and the powerful sweet kick of an aged bourbon, and you've got yourself Tonguespank Smoke & Citrus.
Anise-infused spirits are nearly universal in Mediterranean and European cultures. Absinthe may be the most (in?)famous, but there are dozens more waiting to be discovered. This is CH mixologist Zach Heller's take on a lemongrass anise spirit. Drink it chilled like ouzo, or put your own spin on a classic Sazerac or Death in the Afternoon.
Lavender Hibiscus Vodka
Sometimes you just need something a little floral. This light and fruity infusion can serve as the base for many cocktails, including the tried-and-true margarita as well as Zach Heller's Lilly Sipper (recipe coming soon!).
Cardamom Espresso Gin
We weren't content with a simple coffee bean infusion. Rather, our Cardamom Espresso adds coffee bean and cardamom notes to a good London gin. Fun fact: did you know green cardamom is the third-most expensive spice in the world?
Winter Cheer Rum
We're from Chicago, so we know there's only one right way to get through a long winter: with friends! Turn any rum into a tasty ingredient for cider, cocktails, hot cocoa, and more. Or just sip it by itself!

Smoky Bourbon Table Blend
This blend begins with the sweet aroma of smoky morita chipotle peppers, adds depth and complexity with garlic and bourbon, and finishes up with a slow habanero-and-ghost burn that builds as long as you keep eating it. This goes well on eggs, burgers, grilled veggies... anything that can use a smoky heat.
Garlic Grappa Table Blend
If you've ever been inside an Italian kitchen, you'll recognize this smell immediately. All the Tuscan herbs are here, alongside the warmth of a balsamic vinegar and Italian brandy blend. Replacing the standard red pepper with habanero chilies kicks the whole combination up a few notches. Try it on pasta or in a marinara sauce.
Citrus Rum Table Blend
This blend is a must-try for seafood and pork lovers. Three different citrus fruits combine with spiced rum and cloves to create a tropical combination, plus a dash of habanero heat at the end (because this is Tonguespank we're talking about, after all). Another potential use: combine it with sugar around the rim of a cocktail glass.
Scorpion Bourbon Table Blend
This is the hottest blend we make. We start with Smoky Bourbon and turn it up to 11. We use Trinidad Moruga Scorpions, said to be hotter than the current Guiness record holder at up to two million Scoville units (compare that to Jalapeños at 20,000). Peppers this hot are hard to find, which is why we sell this in smaller quantities. You won't be needing much anyway.
We came across a lot of interesting stuff during our work with CH, but one process stood out as the most interesting (and most fun). It turns out that if you infuse at a high pressure, the end product will be ready to drink in seconds or minutes. We've done a bit of research on why this is, and the reason is SCIENCE.
This means that your hour-long infusion now takes less time than mixing a cocktail. This is a godsend to the the aspiring mixologist, since now the only limits to your experimentation is a) how much alcohol you want to buy, and b) how many prototypes your friends will consent to test for you. Keep an eye out: we'll be posting a demo video in this space in the coming days.

Our biggest risk is fulfillment, should this campaign become more popular than we anticipate.
